Gluten free, dairy free, and caffeinated. These coffee Cones may be the perfect dessert! So here is my coffee meringue again after a failed attempt. I would like to thank my dear friends who gave valuable suggestions.

This is a great recipe creating gorgeous coffee flavored cones that are how they should be, crisp on the outside and soft like a marshmallow on the inside.

Step 1: Ingredients

Ingredients

3 Egg Whites

175g Caster Sugar

1 Tablespoon of Freshly Ground Coffee

1 Tsp - Vanilla Essence

Tools:

Electric Mixer

Piping Bag and Nozzle

Step 2: Beat

Preheat oven to 160°C. Line 2 baking trays with non-stick baking paper.

Beat the egg whites in a large bowl until soft peaks form and mixture is almost all white and bubbly.

Step 3: Add

Sift the icing sugar and the instant coffee into the egg whites.

Gradually add in the sugar while beating.

Beat for 2-3 minutes until stiff peaks form. Mixture should hold position.

Step 4: Pipe

Spoon the meringue mixture into a piping bag fitted with a round 1.5cm-diameter nozzle. Pipe 2cm-round cones, about 2cm apart, on to the lined trays.

Step 5: Bake

Bake in oven for 30 minutes until crisp. Turn oven off.
Leave cones in the oven, with door ajar, for 1 hour to cool completely.
