Introduction: Cookie Wheel Pizza

Have you ever been indecisive about what kind of cookie to make? Here is your solution.  

This cookie easily combines 8 different types of cookie into one beautiful Pizza Sized Cookie. 

What makes this recipe unique is that all of the different kinds of cookies all start off with the same base dough.  No need to measure out 8 different amounts of butter, sugar, eggs, flour etc.  All you have to do is add a few ingredients to each part of the dough and VOILA 8 different cookies in 1.  

White Chocolate Chunk Macadamia Nut
Double Dark Chocolate
M&M
Almond Amaretto
Peanut Butter
Oatmeal Rum Raisin
Chocolate Chip
Plain with Sprinkles

Not only does this cookie look impressive and delicious, it tastes amazing as well!


Step 1: Base Cookie Dough

Base cookie:

4½ cups all purpose flour
2 tsps baking soda
2 cups salted butter, softened
1½ cups packed brown sugar
½ cup white sugar
2 (3.4 oz) packages of instant vanilla pudding mix
4 eggs
2 tsps vanilla extract

1. Preheat oven to 350°F. Sift together flour and baking soda, set aside. *make sure that when you are measuring the flour that you spoon it into the measuring cup. DO NOT tap the flour down.*
2. In a separate large bowl, cream together the butter, brown sugar and white sugar. 
3. Beat in the instant pudding, mix until blended
4. Stir in the eggs and vanilla
5. Blend in the flour mixture

Step 2: Dividing the Dough

Once your base cookie dough is complete, divide it into 8 equal parts.  *I found it easiest to roll it in a log and then divide it in half, then quarters and then into eigths.*

Step 3: 8 Different Flavors

White Chocolate Chunk Macadamia Nut:
Mix together
     â…› of base cookie dough
     ¼ cup chopped macadamia nut
     ¼ cup white chocolate chunks

Double Dark Chocolate:
Mix together
     â…› of base cookie dough
     heaping ⅛ cup cocoa powder
     ¼ cup chocolate chips

M&M:
Mix together
     â…› of base cookie dough
     â…› cup M&Ms
     Once dough is in the pan, press in ⅛ cup of M&Ms to the top of M&M slice.

Almond Amaretto:
Mix together
     â…› of base cookie dough
     ½ tsp Amaretto
     ½ tsp Almond extract
     â…“ cup ground almonds
     2 tbsps flour
Once dough is in the pan, press in a few almond halves or almond slices to the top of Almond Slice.


Peanut Butter:
Mix together
     â…› of base cookie dough
     ¼ cup crunchy peanut butter
     â…› cup flour
Once dough is in the pan, press in a few halved mini Reese Peanut butter cups to the top of the Peanut Butter Slice.

Oatmeal Rum Raisin:
Mix together
     â…› of base cookie dough
     ½ tsp ground cinnamon
     ¼ cup raisins
     â…” cup rolled oats
     1 tsp rum

Chocolate Chip:
Mix together
     â…› of base cookie dough
     ¼ cup chocolate chips

Plain with Sprinkles:
⅛ of base cookie dough
Once dough is rolled out, but before it is cut, take 2 tbsps of sprinkles (or as many needed) to cover the Plain Slice.

Step 4: Pizza Slice Template

1. Trace the outer edge of your pizza pan onto parchment paper.
2. Cut out traced circle. 
3. Fold the circle in half, and then in half again, and then in half again.
4. Cut out one of the possible 8 slices to use as a template. 

*Do not discard the rest of the Circle parchment paper*

Step 5: Making the Slices

1. Pat down/Roll out each flavor of cookie dough into the rough shape of the pizza slice. Should be about ½ an inch thick. 
2. Add toppings of your choice to your individual cookies, ie. Sprinkles, M&Ms, peanut butter cups, etc. 
3. Place the “Pizza Slice” template onto the cookie dough
4. Cut along the straight edges of the pattern using a sharp knife, leaving the excess dough at the rounded edge.  This will be used to create a “crust” for the pizza.

Step 6: Assembling the Pizza Wheel

Use the left-over piece of parchment paper as a guide for placing the individual pizza slices:
1. Place the parchment paper circle onto the ungreased pizza pan.
2. Place the first slice into the cut-out triangle space in the parchment paper, insuring it meets up perfectly in the center with the paper.
3. Continue by placing each successive slice next to one another, so that their tips meet
4. Roll in the excess dough around the edge and pinch in as you might a pie, to form the“crust”. You may need to remove some of the extra dough if the 'crust' is too large.


Step 7: Baking

1. Chill for 15-20 minutes before placing in the oven. *This will help prevent the cookie dough from spreading*
2. Place Pizza in the middle rack of the preheated 350°F oven for 20-30 minutes or until the chocolate chip cookie slice is lightly brown.  *Check regularly as every oven will vary in time*
3. Remove from oven and leave it in the pan.  *This will allow for the middle to continue cooking before cooling down.*
4. Once cooled, ENJOY!

Step 8: Extra Fun

Be creative with your leftover dough!!

Here are some ideas:

Drop Cookies:  spoon a tsp of dough onto ungreased cookie sheet and bake at 350°F for 8-10 minutes.


Pinwheel Cookies:

I decided to make pinwheel cookies by mixing 2 different flavored doughs.

1. Flatten out two pieces of different flavors of dough until approximately a ¼ inch thick .  Make sure they are similar in size.
2. Place one on top of the other
3. Pinch one end and begin to roll the 2 doughs together
4. Place in Refrigerator for 15-20 minutes
5. Cut into slices
6. Place slices onto ungreased cookie sheets *I like to use parchment paper, but not necessary* and bake at 350°F for 10-12 minutes.
