Introduction: Creamy Cilantro-Lime Chicken Pasta

For Chicken
2 tablespoons olive oil
1lb chicken breast (sliced)
¼ teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder

For Pasta
3 garlic cloves minced
2 tablespoons lime juice
¼ cup chicken broth
1 tablespoon cilantro freshly chopped
⅔ cup heavy cream
⅔ cup milk
½ cup mozzarella cheese
8 oz spaghetti pasta
Reserved cooked pasta water
1 tablespoon cilantro (garnish)

Step 1: Preparation Steps 1-3

1.Heat olive oil in a large skillet on medium heat.
2. Slice chicken breasts into strips and season generously with salt, pepper, garlic powder, and onion powder.
3. Place strips of chicken breast in a hot skillet and cook for about 5 minutes until done. Remove chicken from the skillet.

Step 2: Step 4

Using the same skillet, add minced garlic, lime juice, and chicken broth. Cook for 1-2 minutes on high heat. Deglaze and stir the contents of the skillet until liquid is reduced. Be sure to prevent the minced garlic from burning or becoming too brown. Mix in chopped cilantro.

Step 3: Step 5 - 6

5. Add heavy cream and milk to the skillet. Bring to boil, then add cheese and mix until melted. Remove from heat once the cheese is melted.
6. Cook pasta for 9-11 minutes or until pasta is al dente. Drain pasta and reserve some of the pasta water.

Step 4: Step 7 - 8

7. Add cooked pasta to the sauce, along with half of the chicken. Stir in pasta water and season the pasta with more salt to taste.
8. Top pasta with the remaining chicken and garnish with freshly chopped cilantro. Serve and enjoy.
