Introduction: Cucumber Cups With Spicy Hummus
If you are trying to lose weight like I am, you know how difficult it can be to find healthy recipies. This one is delicious and you can easily adjust the amount of spice and garlic. It makes a great appetizer or snack. Garbanzo beans are low in fat and high in fiber and protien.
Step 1: Ingredients and Supplies
You will need a cucumber, can of Garbanzo Beans (Chick peas) garlic, Mrs. Dash southwest chipotle seasoning. and Olive oil. You will also need a food processor, paring knife, and a utensil to scoop out the cucumbers, I used a vegetable peeler with a pointy end.
Step 2: Making the Hummus
Open the can of Garbanzo beans. Drain. Place beans in food processor and blend. Peel garlic cloves, I used 3 but you may just want 1 or 2. Add garlic to beans. Add 4 tablespoons olive oil and 1 teaspoon Mrs. Dash seasoning. Puree mixture in food processor.
Step 3: Make Cucumber Cups
Cut the ends off of cucumber. Cut cucumber into pieces about 1-1/2" wide. Scoop out inside of each slice but not all the way through.
Step 4: Fill Cucumber Cups
Place a scoop of Hummus into each Cucumber cup. Make the Hummus ahead of time and keep refridgerated. Prepare the cucumber cups just before serving. Hummus is also good as a dip for Quaker tomato and basil flavored rice snacks.

You mention olive oil already sorry:) thank you for sharing that would be a very good snack for Superbowl :)

This is a very good idea if you want your hummus has more flavor, you may try to put some 'tahini' and 'lemon juice' and try to use olive oil or sunflower oil :)

I just made these and I'm really impressed! So simple but very tasty and filling! I used just a regular ol spoon in place of a melon scoop or peeler and work very well! Thanks for the great treat!
