Introduction: Dorito Chicken Casserole and No-Bake Cookies -- Quick & Easy Dinner Date

Are you looking for a quick and easy date? We have a simple meal you can make with or for your date. Dorito Chicken Casserole and No-Bake Cookies are easy to make and delicious. They will prove to be a perfect combination!

Step 1: Dorito Chicken Casserole -- Ingredients

  • 2 cups cooked chicken (about 4 Chicken Breasts)
  • 2 cups shredded Mexican Cheese Blend (or Cheddar Cheese)
  • 1 (10 oz) can Cream of Chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 1 can Diced Tomatoes (drained)
  • ½ packet Taco Seasoning (about 4 teaspoons)
  • 1 large bag Cheese Doritos

Step 2:

Pre-heat the oven to 350 degrees.

Cook the chicken and then cut into small strips. You can boil the chicken, cook it in the oven, or fry it on the stovetop. (An easier option is to use pre-cooked packaged chicken as shown in the picture.)

Step 3:

While chicken is cooking, grease a 9x13 baking dish and set aside. This can be greased with cooking spray or butter.

In a large bowl, mix the 2 cups cooked chicken, half of the cheese (1 cup), 1 can cream of chicken soup, ½ cup milk, ½ cup sour cream, 1 can diced and drained tomatoes, and 4 teaspoons taco seasoning. Set aside. (Adding the chicken last may be the easiest way to mix the ingredients.)

Step 4:

Next, crush the Doritos in a bag. This can be done in the bag they come in or in a separate plastic bag. For convenience sake, I crush them in the original bag using a cup. (You may need to let a little air out of the bag first.) Crush them until the largest crushed pieces are about ¼ of their original size.

The next step is to layer the Doritos and chicken mixture in the casserole. The first layer will be crushed Doritos. Sprinkle ½ of the bag of crushed Doritos on the bottom of the greased casserole dish.

Top the crushed Doritos with a layer of half of the chicken mixture. As you spread the chicken mixture over the Doritos they might mix together a little bit. Try placing the chicken mixture (the half you’re using) in small blobs on top of the Doritos and spread them out from there.

Step 5:

Remove from the oven, let cool, and enjoy! It can be served with almost any side dish. Try a delicious salad, bean dip, or just some simple cooked vegetables.

Step 6: No-Bake Cookies -- Ingredients

  • 2 cup sugar
  • ½ cup milk
  • 1 stick (8 tablespoons) unsalted butter
  • ¼ cup unsweetened cocoa powder
  • 3 cups old-fashioned rolled oats
  • 1 cup smooth peanut butter
  • 1 tablespoon pure vanilla extract
  • 1/8 teaspoon (a pinch) of salt

Step 7:

Combine 2 cups sugar, ½ cup milk, 1 stick (8 tablespoons) butter, and ¼ cup unsweetened cocoa powder in a medium saucepan. On medium heat, bring the cocoa combination to a boil while stirring occasionally.

Step 8:

While the sugar, milk, butter, and unsweetened cocoa powder are heating, place 3 cups oats in a separate bowl.

Meanwhile, prepare your other ingredients—1 tablespoon vanilla, 1 cup peanut butter, and 1/8 teaspoon (a pinch) salt—and set aside.

When the cocoa mixture on the stove is completely melted, bring it to a boil. Let the cocoa mixture boil for 1 minute while stirring constantly. Note: It is important to begin timing when the mixture is at a full rolling boil! Don’t just start it as soon as it starts boiling.

Remove the cocoa combination from heat after timing it for 1 minute.

Pour the cocoa combination over the oats and then add 1 cup peanut butter, 1 tablespoon vanilla, and 1/8 teaspoon (a pinch) salt. Stir together until thoroughly combined.

Step 9:

Using a spoon, drop small dollops (or heaping spoonfuls, depending on your preference of cookie size) onto a cookie sheet.

Place the cookie sheet in the freezer. (You may have several cookie sheets of cookies so you can place some in the freezer and some in the refrigerator. You can also leave some on the counter to set at room temperature. Cookies set best in the freezer.) (You may use parchment paper to cover your cookie sheets or place them directly on the cookie sheet.)

After 15 minutes (or when firmly set up), remove the cookies from the freezer. Enjoy!

Your casserole should be out any minute now and your dessert is just hardening. You can toss together that side dish quickly and enjoy your simple, quick, and delicious meal!
