Introduction: EASY ReMix Cake Mix Cookies

I love making these cookies because they are so easy and so tasty.

Though I don't mind spending 26+ hours trying to figure out an easy way to build and explain a kinetics project to a kindergarten students, anything related to cooking, baking, making a meal etc. used to stress me out to no end. So, this type of cookie baking is PERFECT for me (though I do bake a lot of other things from scratch).

Step 1: List of Ingredients:

You can use any kind of cake mix to make any kind of cookies, but today, I'm making what I call "Rocky Road" cookies and oatmeal raisin cookies.

List of Ingredients (Basic Cake Mix Cookies):

  • 1 box chocolate cake mix (any brand)
  • 1 box carrot cake mix (any brand)
  • 1/3 cup vegetable oil
  • 2 eggs

List of Ingredients (ReMix Cake Mix Cookies):

  • 1 box chocolate cake mix (any brand)
  • 1 box carrot cake mix (any brand)
  • 1/2 cup vegetable oil
  • 2 eggs
  • add up to 1 and 1/2 cups of various add-ins of your choice. I usually add 2 to 3 different 1/2 cups of stuff to make my cookies more home-baked and tasty

Step 2: Add the Ingredients and Mix With a Big Spoon

I am all about convenience and washing the least number of things after I'm done. So, I just put everything in a bowl and mix with a spoon. I did use my stand mixer before, and I didn't like the fact that it was too smooth, too well-mixed.

Oatmeal Raisin Cookies:

  • Add 1 carrot cake mix package
  • Add 1/2 cup of quick oats
  • Add 1/2 cup of raisins
  • Add 2 eggs
  • Add 1/2 cup of vegetable oil
  • Mix well
  • Bake at 350 degrees F for about 20 min (I've baked cookies for 15 - 25 minutes depending on the size, consistency, and texture)

Rocky Road Cookies:

  • Add 1 chocolate cake mix package (any kind)
  • Add 1/2 cup of white chocolate chips
  • Add 1/2 cup of shredded coconuts
  • Add 1/2 cup of walnuts
  • Add 2 eggs (I don't bother beating them)
  • Add 1/2 cup of vegetable oil
  • Mix well
  • Bake at 350 degrees F for about 20 min (I've baked cookies for 15 - 25 minutes depending on the size, consistency, and texture)

Step 3: Scoop the Batter Onto a Cookie Sheet

I don't have a fancy cookie scooper. I used a rounded soup spoon, and it's works perfectly for me. Use whatever you have. I don't think it'll make a big difference.

The thing I want to note is that the Rocky Road cookies seem to spread out more than the oatmeal raisin cookies. So please, leave room for the cookies to spread.

Step 4: Ta Dah!

After about 20 minutes, these are the cookies you get.

Again, I like softer cookies, so I take them out a little sooner.

I really like baking these cookies because:

  1. It's easy. If I can do it, anyone can.
  2. It's tasty. Sometimes, it's a little sweeter than I like, but my family and friends gobble these up very quickly.
  3. It can be made "better" or "healthier", depending on how adventurous you want to get. I've added shredded carrots, finely chopped kale (I know kale. What was I thinking?), shredded apple (too runny. I should have squeezed out the juice first), dried cranberries, marshmallow (gooey goodness, but a big melted mess), chopped prunes, etc.
