Supplies

ingredients:

180g all purpose flour ( 6,35 oz)

100g soft butter ( 3,5 oz )

90g powdered sugar (3,15 oz)

1 egg yolk

1 tbsp vanilla sugar

1 tbsp cocoa powder

1 tbsp milk

optional: food colouring

helpful stuff:

rolling pin

sharp knife

cling foil

Step 1: Making Dough

knead all ingredients except cocoa powder and milk to a smooth dough.

It will be crumbly at first, but as the butter gets softer,

the dough will get smooth and firm - be patient, but if it absolutely won't stick together after a few minutes of kneading, add a tbsp milk ( the egg yolk might have been a little to small, and you'll need more fluid )

Step 2: Black and White

roll the previous made dough and cut it in half.

add 1tbsp cocoa powder and max 1 tbsp milk to one half and knead until it's evenly spread.

wrap the both dough rolls in cling foil and put in the refrigerator for at least 30 minutes.

you have now dough for black and white butterflies, if you want more colourful cookies, add food colouring to the white dough.

Step 3: Rolling the Dough

roll the refrigerated dough between cling foil to an even thickness around 4mm (0,15")

try to keep a rectangular shape

place the dough sheets onto each other - take the rolling pin or the cling foil as support.

then roll them up lengthwise - try to keep it tight.

NOTE: the cling foil can be helpful while rolling up - in case the dough is to warm and breaks - but of course don't roll it in :)

Step 4: Shaping

cut the ends of the previous made dough roll until you see even spirals

cut the roll in half

press the both halves together lengthwise, with the spirals in the opposite direction - as shown on the pictures

Step 5: Making Butterflies

cut 5mm (0,2") slices from the double roll

to shape the butterflies:

pinch the sides of the slice with two fingers, until you get a wing shape

make small cuts for the antennae

shape the antennae with your fingertips

place on a baking tray covered with parchment paper

Step 6: Bigger Butterflies

take two slices of the double roll and press them together in a wing shape

- take som dough to form antennae and pinch them on

place on a baking tray covered with parchment paper

Step 7: Baking

preheat your oven to 180°C (356°F)

for a better baking result place the baking trays with butterflies, in a cool place.

when the oven is warmed up, bake the cookies for 12 to 15 minutes.

allow to cool on a cooling rack

Step 8: Now the Best Part ...Nom Nom Nom

enjoy the chocolate flavour of a butterfly cookie!
