Looking for a healthier gluten-free pizza? Try these easy eggplant pizza appetizers that don't need rolling pizza dough!
If you want to include more vegetables in your kids diet, try the eggplant pizza. It is great to enjoy cold or right from the oven.

So making pizza should be fun! You can involve kids into making this easy recipe at home.

Supplies

1-2 medium eggplants

1 big tomato or a cup of cherry tomatoes

1 cup of cheddar type cheese

1/2 cup thinly sliced sausage

1/2 tsp salt

1/2 tsp pepper

1/4 tsp dry dill

1/2 tsp dry marjoram

Step 1: Prepare Eggplat

Preheat oven to 355 F / 180 C.

Slice eggplant into 1/2 inch thick rounds and place on a baking tray, layered with parchment paper.

Brush eggplants with olive oil and sprinkle with salt and pepper.

Bake for 30 minutes.

Step 2: Prepare Other Ingredients

While the eggplant is baking, cut the tomatoes and shred the cheese.

Slice the sausage, if needed.

Step 3: Make Pizza

After 30 minutes remove the eggplants from the oven, but don't turn it off.

Pat eggplants with paper towel to remove excess oil and liquid.

Add sausage, tomatoes and cheese on top.

Bake 5 minutes more until cheese melts.

Step 4: Enjoy Your Pizza

Let the eggplant cool a little and enjoy a healthier pizza appetizer.

You can store it in the fridge up to 4 days.
