Introduction: Easy No-Bake, Silky Chocolate Pie (delicious!)

This is quick, delicious, and can be "dressed up" or "straight outta the box". This pie has lots of protein too! If you're in a hurry, buy the crust and don't add extras. If you want to go-all-out, make your own crust, pie mix, add extra ingredients, and decorate the top when it's ready. You can also make it sugar-free using the amazing Lakanto, also known as Monk Fruit (I will include a photo if you've not heard of this incredible sweetener.) This pie is the dessert equivalent of "the Little Black Dress", it's versatile and can be made as purist or decadent as one's needs require ... even if you need to leave out the chocolate and use carob or vanilla, etc., instead. Just practice with ingredients until you get exactly what you want :)

Step 1: Basic Pie Is Three Ingredients, I Used Four:

One graham cracker crust (I was in a hurry so I bought mine); two boxes MoriNu silken tofu, two packets MoriNu pie mix (they have other flavors too, such as vanilla and butterscotch); and two tablespoons chocolate chips. (My supermarket usually carries the MoriNu tofu and pie mix but often they are out of it, so I found it on Amazon in bulk and saved money there.)

Step 2: Follow the Directions on the Package:

It's important to drain the tofu so you can correctly control the water you want to add (too much water and you'll have pudding instead, sometimes I use a paper towel and pat tofu dry.) Use only 6 tablespoons of water, then blend tofu and water until creamy in a blender or food processor. If you need an even stiffer pie filling, experiment with a tad less water, like 5 1/2 tablespoons or less. Add dry pie mix and chocolate chips (if wanted). Blend for two minutes, stopping and scraping sides as needed.

Step 3: Pour Into Crust:

Pour pie filling into crust and cover. Place in refrigerator overnight or for 24 hours. Yum!

Step 4: Lakanto

This tastes amazing and doesn't raise blood sugar, research it for use with diabetes. There's different brands and I found it for purchase on Amazon.
