These Easy Zucchini Fritters is one of the most popular breakfast recipes in our family, so I decided to share it with instructables! I enjoyed this recipe from my childhood, when my mother used to make it from fresh zucchini from my aunt's garden. With the few variations I adjusted the recipe to make it perfect every time.

The whole prep process is less than 30 minutes to get you delicious breakfast that can be served hot with yogurt or sour cream. These are also tasty cold, when packed into lunch box!

Fritters are vegetarian, perfect to add more veggies into your or your kids diet! Moreover you can make them ahead of time and freeze.

Supplies

4 cups grated zucchini
1/2 cup hard cheese of your choice
3/4 cup all-purpose flour
2 large eggs
3/4 cup chopped scallions
2 tsp salt
1 tbsp vegetable oil for frying
For serving: Greek yogurt or sour cream (optional) and extra chopped scallions (optional)

Step 1: Prepare Ingredients

Grate zucchini in a bowl, sprinkle with salt, mix and leave for 20 minutes to let it release the juice.

Meanwhile, grate the cheese and chop the scallions.

Squeeze the excess liquid from zucchini with your hands (you can also use a sieve or a cheese cloth).

Discard the liquid - use it for soup or smoothie.

Step 2: Mix and Cook Zucchini Fritters

Add grated cheese, eggs and scallions in the squeezed zucchini. Mix with the flour. Add pepper.

Heat oil in a pan on a medium heat. Form the fritters from the zucchini mix.

Add about 2-3 tbsp of the mix to the pan and fry the fritters 2-3 minutes on each side until brown and crispy.

Leave the fritters on the paper towel to remove excess oil, if needed.

Step 3: Serving Zucchini Fritters

Let them cool to store in the fridge up to 4 days, or put in the freezer bag and store in the freezer up to 2 months.

Cold fritters are also great for snacks!
