Introduction: Empanadas

Enjoy some delicious Mexican empanadas!

Rectangle steel sheet pan

Tortilla press or rolling pin

Step 1: Dough

Ingredients needed:

4 cups of flour

2 bars of butter

1 cup of evaporated milk

1 1/2 cup of sugar

1/4 tsp of baking powder

Step 1: Grab a mixing bowl and pour the ingredients there. First add the flour, then follow by adding the butter and use hands to mix ingredients together.

Step 2: Slowly add the evaporated milk while also using the other hand to mix the dough that is forming

Step 3: Add the sugar to the mix and follow by also adding the 1/4 tsp of baking powder

When the dough has been throughly mixed and you see a consistency in the dough you can wrap it up and refrigerate for 30 minutes.

Step 2: Filling

Ingredients:

3 sweet potatoes

2 cups of water

1 cup of sugar

Step 1: In a pan, add 2 cups of water then follow by adding the 3 sweet potatoes.

Step 2: Put the pan on the stove and let it boil. Once it starts boiling, leave for 5 minutes then turn off the stove.

Step 3: Take the 3 sweet potatoes from the pan and add them to a bowl.

Step 4: Add sugar to the bowl

Step 5: Mix the sugar and the sweet potatoes together

Step 6: Once it is throughly mixed and see no chunks of sweet potato, that means it is ready to be used as the empanada filling.

Step 3: Forming the Empanada

  • Once the dough has been refrigerated for 30 minutes, the dough can be taken out to proceed.
  • Cut the dough in half
  • Using one half of dough, proceed to make small balls and repeat until the dough has equally been converted into small balls of dough. Then follow by doing the same to the other half of the dough.
  • The portion of balls should be 32 balls of dough.
  • Grab a tortilla press or a rolling pin and start flattening a ball of dough
  • Once the dough has been flatten, proceed by adding your sweet potato filling to the center of the dough
  • Folder over into a half-moon shape and seal
  • Grab a fork and proceed to press the forks tooth down all around the edge of the empanada to decorate
  • Place empanada on the rectangle steel sheet pan
  • Proceed to making your next empanada until all 32 are done
  • Preheat oven to 350 degrees
  • While the oven is heating up, grab a bowl of sugar and proceed to sprinkle each empanada with sugar to give it a more sweet and savory taste
  • Once that is done, place your pan of empanadas into the oven for 30-35 minutes until golden.




Step 4: Final Product

When the empanada has got into a golden color that means it is time to take it out of the oven and enjoy :)
