Introduction: Eton Mess
Berries, cream, meringue... what's not to like?
This is a traditional English dessert, supposed to have been invented at the famous public school where so many politicians are educated.
Step 1: Ingredients
Berries - I used blackberries and strawberries
Double (heavy) cream
Meringues
Sugar to taste
Step 2: Prepare the Ingredients
Sieve some of the berries to make a puree and sweeten with a little sugar.
Chop some of the strawberries if they are large.
Whip the cream until soft peaks form.
Crumble some of the meringues.
Step 3: Assemble the Dessert
In tall glasses, arrange layers of berries, meringue, fruit puree and cream until the glasses are full. Top with a whole meringue and some whole berries to decorate. Chill.
Step 4: Enjoy Your Dessert!
You can adapt this to suit what you like and what you have. You could mix the cream, fruit and crumbled meringue together rather than layering it. I made a second version (shown here) which leaves out the whole fruit, for someone who dislikes the seeds in berries.
