The uniqueness of this dish is in fried orzo! I choose to make it with mixed seafood but fried orzo can be served with chicken, beef, lamb, pork or fish (grilled, fried or boiled)
For seafood and fish the sauce I used goes very well. The pieces of smoked salmon add yummy tast to the sauce.

Step 1: Ingredients:

Ingredients
2 cups of orzo
Seafood mix about 1 lb or 450 gram
Smoked salmon about 3 oz or 85 grams ( 3-5 slices)
Sauce

SAUCE INGREDIENTS:
2 egg yolks at room temperature
1 tbs apple cider vinegar
1 tbs regular or Dijon mustard (or ½ tsp dried mustard)
⅓ tsp salt
½ tsp ground annato
3 cloves of garlic
½ cup olive oil




Step 2: Preparing Sauce

Put egg yolks into bowl and whisk/blend until smooth. Add vinegar, mustard, salt and blend until mixed. SLOWLY add oil while blending or whisking at low speed, starting with olive oil. Start with a drop at a time until it starts to emulsify and then keep adding slowly until all oil is incorporated. Put it aside

Cut/dice salmon and put into separate bowl. It will be added to sauce later when we will be cooking seafood.

Step 3: Preparing Orzo

Add a bit of olive oil into frying pan, add orzo and start to fry, constantly mixing orzo to avoid burning it. When orzo becomes a bit brownish, fried, add 2 cups of water, cover with lid and cook for about 12 minutes ( till fully cooked)

Step 4: Cooking Seafood

Put another frying pan on a stove, add sauce and add seafood, mix together and start cooking. Cook for about 5-7 minutes and then add pieces of smoked salmon, annato, mixing all ingredients. Mix all well and turn of the frames. It is cooked.

By this time your orzo is ready too. Strain extra water if any left. Transfer orzo to a dinner serving plate or a bowl. Add seafood over orzo and that is it.
