Introduction: Gluten Free Lemon Brownie (Blondie) Slice


  • 250g butter
  • 2 cups of caster sugar
  • 4 eggs
  • 1 1/2 cups gluten-free plain flour
  • 1tspn. Xanthan gum
  • 1 cup of coconut
  • 3 tsp lemon rind
  • 1/4 cup lemon juice
  • Pure icing sugar for dusting.

Step 1: Melt Butter and Allow to Cool Slightly

Preheat oven to 170c fan forced and line a slice tin with baking paper.

Step 2: Stir in Caster Sugar Until Well Combined

Step 3: Add Eggs One at a Time

Step 4: Fold in Sifted Flour, Xanthan Gum, Coconut

Step 5: Grate Lemon Rind and Add the Juice

Step 6: When Well Combined Pour Into the Prepared Tin and Smooth Top.

Step 7: Bake for Approx. 30 Min at 170c/338f

Step 8: Once Skewer Comes Out Clean, Allow to Cool in the Tin

Step 9: Cut Into Bars and Dust With Icing Sugar Just Before Serving.

Step 10: Enjoy With a Cup of Tea
