Introduction: Gluten Free Peanut Butter Cookies

Gluten free peanut butter cookies. This is a gluten free peanut butter cookie that taste like a traditional peanut butter cookie. I have made the three ingredient peanut butter cookies for years, but I have always felt like they were lacking something. So I set out in my kitchen to make a better gf peanut butter cookie. I played around with gluten free flour options and came up with this recipe. I wanted to limit the ingredients and keep it as simple as possible while still adding some traditional cookie elements. My kids are in love with them and had no idea they were gluten free.

Step 1: Recipe

Preheat oven to 350°
1c Sugar
2 Eggs
1c Peanut Butter
1c Rice Flour
1/2t Baking Powder
3/4t Salt
1t Vanilla extract

Cream together sugar and eggs in mixer on medium for approximately 2 minutes, scraping sides as needed. Add peanut butter until incorporated. Add dry ingredients (rice flour, baking powder, salt) until incorporated, lastly add vanilla. You should end up with a cookie batter consistent with peanut butter cookies. see picture above.

Step 2: Bake

Scoop batter by oversized teaspoonful onto cookie sheet. Flatten with fork, making cross section typical of peanut butter cookies. I managed to get 8 on one small cookie sheet and put 2 sheets in my oven side by side on middle rack. Bake for 7-9 minutes, until light brown on bottom edges. These overcook quickly, I had to keep a close eye on them.

Step 3: Finished Cookie

These cookies are not overly sweet I had a chocolate craving and some left over vanilla frosting from a cake, I added 3tbls of cocoa and a teaspoon of milk to my frosting to make chocolate frosting and finished my cookies.
