Introduction: Grandmother Elise's Easy Apple Cake W/bonus Blueberry Applesauce

About: Creating beautiful things in the kitchen and outside it, I'm always working on a new project!

When I moved out on my own, my mother gifted me the 1943 copy of "The Joy of Cooking" that had been passed down from her mother and step-mother. This is an amazing piece of family history and there are many notations and scribbles on the pages from both my maternal grandmother (whom I never knew as she passed when my mother was in her teens) and my step-grandmother Elise who was the only grandmother I knew on my mothers side.

Paging through this ancient cookbook I found this index card tucked inside. Written in the neat script of my Grandmother Elise's hand, speckled with stains and creases of age I had to try this recipe and have been hooked ever since.

Whenever I have apples that are about to go soft (my attempt at having fresh fruit in the house and not eating it) I love making this cake. My house smells AMAZING right now.

I used the extra apples that didn't make it into the cake to make Blueberry Applesauce...details at the end of this instructable.

Step 1: First Steps

Easy Apple Cake

Into a large bowl put:

4 Cups diced Apples, about 4 large apples (skin on or off, your choice. I LOVE my apple peeler!)

2 Cups Sugar

IMPORTANT STEP

Let stand for 30 minutes

Below is a link to a shameless plug for my employers apple peeler! If you don't have one, I highly recommend buying one. It takes mere seconds to peel, slice and core an apple and rinse the peeler off and put it away. Such a time saver!

Step 2: Apples

Four Cups of chopped apples is about 4 large Apples

Toss with sugar and let stand for 30 minutes.

Apples will release juice and the mixture will be syrupy.

After apples are 'juiced up', preheat oven to 350.

Add:

1/2 Cup Vegetable Oil

2 Beaten Eggs

Step 3: Dry Ingredients

Add:

2 Cups Flour

2 tsp Cinnamon

2 tsp Baking Soda

1/2 tsp salt

Step 4: Final Steps

Blend in:

2 tsp Vanilla

1 c Chopped Nuts (optional, I do not add)

Grease/Spray a 9 x 13" cake pan and place mixture in pan.

Step 5: Baking

Bake at 350 for 40-60 minutes.

I like to bake a little longer so the edges get caramelized and crispy.

Dig in! Easiest and BEST apple cake EVER!!

Step 6: Bonus Blueberry Applesauce!

With the rest of the apples I had peeled and chopped I put in a small saucepan and added a handful of blueberries I had that were getting dried up in the fridge.

I added a splash of water and boiled for about 30 minutes then used my potato masher and blended.

No additional sweetener needed! Healthy snack/side for lunches or anytime.
