Introduction: Greek Pork & Chicken Kontosouvli

Here is my way of making your own kontosouvli for your grill.

Supplies

For a kontosouvli you need:

  1. pork or chiken meat (without bones, about 1kg)
  2. red and green peppers (not chilli)
  3. salt
  4. pepper
  5. chili flakes
  6. paprika
  7. thyme
  8. olive oil
  9. vinegar
  10. wooden sticks

Step 1: Assembly the Kontosouvli

First you cut the peppers and meat in cubes of 4-5cm. You start placing one by one meat and pepper into the stick. When you assembly the whole stick, season the meat with the rest of the ingredients and let it marrinate (at least 1hour). After that you are ready for the grill. For best results use a thermometer (there are different target tempereture for different meat). It needs about an hour, depending of the power of the grill with rotations every 20'.
