Introduction: Grilled Tofu and Veggies
This is a great and quick dish for those looking for simple meat-free dishes. It should take about only 5 minutes to prep and 10 minutes to cook.
For this recipe, you will need:
1 chopped garlic clove
1 tablespoon of ground cumin
1 tablespoon of ground coriander
2 tablespoons of grapeseed oil
2 tablespoons of balsamic vinegar
1 tablespoon of honey
A pinch of Salt and black pepper
2 red peppers, cut into 2-inch pieces
12 stalks of asparagus
2 portobello mushrooms with the stems removed
1 pound of extra firm tofu, sliced thickly

Step 1: Preheat and Mix
Use either a grill or a pan made for grilling and preheat it to a medium-high temperature. Then mix the 1 chopped garlic clove, 1 tbsp of ground cumin, 1 tbsp of ground coriander, 2 tbps of grapeseed oil, 2 tbps of balsamic vinegar, 1 tbsp of honey, and a pinch of salt and pepper in a large bowl.
Step 2: Throw in the Veggies
Add the 2 red peppers that are cut into 2-inch pieces, 12 stalks of asparagus, 2 mushrooms without stems, and thickly sliced tofu to the mixture in the large bowl. Toss until the spices and oil evenly cover all vegetables.
Step 3: Grill It
Place the vegetables and tofu onto the grill for about 8-10 minutes, occasionally flipping until they are tender with grill marks on both sides.
Step 4: Enjoy It!
Take off grill and let cool for a couple minutes before digging in. And who said vegetarian dishes are tasteless?
