1 Teaspoon Measuring Spoon

1 Cup or 2/3 Cup Measuring Cup

1 Spatula

1 Piece of Paper

1 Ruler

Your Fortune Messages

1 Pair of Scissors

Step 3: Let's Get Started

Start by laying wax paper or spray your baking sheet with cooking spray. Be sure to use a generous amount!

Step 4:

Add the egg whites, vanilla, lemon juice, vegetable oil and water in a moderately sized bowl.

Step 5:

Whisk/beat the eggs until they are foamy and have a light airy texture.

Step 6:

Sieve in the flour, sugar, corn-flour and salt. Beat in the dry ingredients until everything is evenly mixed and smooth.

Step 7:

Split the batter in half and dye one portion of the batter orange (or whatever color you like) and the second portion black. In other words, partition half of the batter out into one bowl and the remaining half into a separate bowl-- and dye them accordingly.

Step 8:

Put bowls in the fridge for a minimum of 30 minutes.

Step 9:

While your batter is in the fridge, proceed to make the messages (using cut construction paper or anything similar that you may have on hand).

Step 10:

How to make the paper fortunes-

Using plain printer paper or any paper you have on hand, (make sure that it is not too thin)- cut several pieces that have the approximate dimensions 12 mm by 60 mm. It might be wise to layer several sheets of paper together and cut them all at once in order to speed up the process, especially if you are making a larger batch of cookies. If you want the messages to look crisp and precise, use a ruler and a pen or pencil in order to measure out the dimensions and cut along the marked lines.

Step 11:

At this time, preheat your oven to 325 degrees.

Step 12:

Once the batter has been in the fridge for the required time, use 1 tablespoon to portion out a circle onto your baking sheet approximately 2.5 inches in diameter. Only deal with 2 cookies at one time in order to ensure that you don’t overwhelm yourself.

Step 13:

Bake the 2 cookies at a time at 325 Degrees Fahrenheit for 10 minutes.

Step 14:

It is recommended to open the oven when the cooking time is nearing about 8 minutes, take a spoon/any utensil and gently poke at the batter (softly, you don’t want to puncture a hole in the dough) and make sure that it is relatively soft. Also make sure that the edges are not brown/crisp - this will result in cookies that are hard to fold correctly and that will most likely fall apart due to their brittle texture.

Step 15: Note for the Baker

These next steps must be completed in a very short amount of time, so please work quickly and carefully.

Step 16:

Take the baking sheet (with the cookies) out of the oven.

Step 17:

Picking them up with a spatula, flip them over and place the fortunes directly in the center.

Step 18:

Fold the cookies in half and make sure there is air within the fold. With the folded side on the brim of a mug, pinch both sides together to create the final crease. Hold in place for two minutes.

Step 19:

Place your cookies in a measuring cup (1 cup or 2/3 cup) and or take a muffin tin and position your cookies into the slots. This will help them maintain their ‘fortune cookie’ shape.

Step 20:

If by chance your cookie hardens before you can perform the above process, put it back in the oven momentarily to re-soften the batter.

Step 21:

After you have completed the process of making the cookies, place them in the fridge in a tight position for 2 days in order to let them harden and have a cracker-like texture.
