Introduction: Happy Skin Watermelon-Mint Smoothie

Some smoothies can be too thick and sweet, in my opinion. soon after consuming, I get a surging sugar rush and I crash an hour later - not fun. This recipe makes a light, energizing and refreshing beverage - perfect for hot summer days sans the crappy sugar crash.

Watermelon is mainly recognized for its green shell, pink flesh and black seeds. What most don't know is its packed with lycopene (what gives it that rosy color) It is an antioxidant that helps protect cells against free radical damage

...that's enough for me to know! I'm from South Texas where the sun blares, mercilessly and its horridly hot and humid. This smoothie is perfect. I love making it after spending some time outside in the sun. I usually throw in some chia seeds for extra added health benefits - packed with omega-3 fatty acids, which help promote healthy, supple skin.

For this recipe, I added agave - good for those with diabetes since its absorbed into the bloodstream slowly, so no sugar spikes. Also, watermelon is already sweet, so you can opt out of using sweetner and/or substitute rice milk for yogurt to make it creamy.


Ingredients:

1 1/2 Cup Seedless Watermelon Chunks
1/2 Tbs Agave Nectar or Honey (I use OhGave! Honey Flavor Nectar)
1 Tbs Finely Chopped Fresh Mint Leaves
3/4 Cup Rice Milk or 1 Cup Plain Soy Yogurt
1/2 Tbs Chia Seeds
About 10 Ice Cubes

Instructions:

Pour all ingredients in a blender or food processor and pulse until becomes puree. Serve in a chilled glass, garnish with mint leaves and add a stirrer to keep from separating.
