Introduction: Homemade Crepes and Toppings

Crepes are an absolutely delicious dessert, but they cannot be enjoyed alone; therefore they make perfect party food! Crepes are also complex, as they require sauces and other toppings to make them complete. As homemade desserts are scrumptious, the purpose of these instructions is to describe the process of making crepes, hot fudge, caramel sauce, and cinnamon sautéed apples. Steps 1, 2, 8, 9, and 10 discuss the process of making the crepes. Step 3 describes the making of the hot fudge while steps 4 and 5 are for the caramel sauce. Finally, steps 6 and 7 are for the cinnamon sautéed apples. It is not necessary to make all the toppings to enjoy the crepes, but truly the more options available, the more delicious combinations can be discovered. No culinary skill required; everyone can make delicious crepes!

Necessary Equipment:

1 crepe pan

2 sauce pans

1 frying pan

1 blender

1 set measuring cups and spoons

1 spatula

Step 1: Making the Batter

(10 minute preparation, 2 hours refrigeration)


1 cup cold milk

1 cup cold water

4 eggs

1/2 teaspoon salt

2 cups flour

4 tablespoons melted butter


Place all the ingredients in a blender, top item first. Run the blender on high for one minute. Scrape down the sides of the blender with a spatula, and then blend for an additional minute.


Crepes are supposed to be thin, as such it is vital that the above ingredients are well blended in order to ensure thin crepes.

Step 2: Chill Batter

Place the blended batter in the refrigerator for at least two hours to chill prior to use.

Step 3: Hot Fudge

(10 minute preparation)


32 ounces semi-sweet chocolate

2 ½ cups half and half

1 ¾ cups sugar

1 teaspoon vanilla


Melt everything except for the vanilla in a large pot, on medium-low heat, stirring constantly. Bring to a boil and then reduce heat to low and continue stirring frequently to prevent burning. Let simmer on low heat for 2-4 minutes, until creamy. Remove from heat, add vanilla and stir. It should look like the above picture. Let cool to room temperature.


It is important to stir frequently during this whole process and make sure that while stirring you reach the bottom and sides of the pot to prevent burning, as chocolate will scorch very easily.

Step 4: Caramel

(10 minutes preparation)


½ cup butter

1 ¼ firmly packed brown sugar

2 tablespoon corn syrup

½ cup whipping cream


Melt butter in sauce pan. Add brown sugar and corn syrup, and bring to a boil. Continue to boil until the sugar is completely dissolved and has a smooth texture, as pictured above.


To keep proportions correct, it is imperative that the brown sugar is tightly packed in the measuring cups prior to combining with other ingredients.

Step 5: Caramel

Add whipping cream to the caramel mixture. Stir constantly until the sauce returns to a boil, then remove from heat.

Step 6: Cinnamon Apples

(20 minutes preparation)


Apples are best served warmed, as such these should be prepared in the minutes prior to cooking the crepes. If they are cooked too soon, they will become overly soft and soggy.


2-3 green apples

3 tablespoons butter

½ teaspoon cinnamon

½ cup brown sugar

1 tablespoon whipping cream


Peel, core, and slice apples thinly. Melt butter in frying pan then add apple slices, stirring constantly. Cook for 4-6 minutes, until tender.


Overcooking the apples will make them mushy. To prevent this, test the heat of the pan by placing a single apple in the pan; it should immediately sizzle if the pan is at the correct temperature. The apples will darken slightly in color, as shown above. The easiest way to assure that the apples are tender is by simply trying a portion of an apple to check the texture; they should be easily cut with a fork.

Step 7: Cinnamon Apple

Add cinnamon, brown sugar, and whipping cream to the apples after they are tender. Stir until sugar is dissolved, as shown above. Serve immediately.

Step 8: Cooking the Crepes

Heat the crepe pan to a medium heat; ensure the pan is hot enough by drizzling a few drops of water into pan. They should sizzle and evaporate immediately. Pour approximately ¼ cup batter in the pan while tilting the pan in all directions in order to cover the pan in a thin layer of batter (this can be shown in the above video). Cook for about two minutes (see the above picture). Use a spatula to help flip the crepe. Cook on the opposite about one minute.


Crepes will not change color as they cook, unless you want crispy crepes.

Step 9: Assemble

Add sauces and apples to the crepe and then fold up, as pictured above.


Other toppings that are wonderful in crepes include: sliced fresh fruit, ice cream, whipped cream, and peanut butter.

Step 10: Eat
