Introduction: Honey-Sweetened Carrot Lemonade

The perfect summertime treat, courtesy of the local pollinators!

Adding a splash of carrot juice to this fresh squeezed honey-sweetened lemonade makes for the most gorgeous colored drink. There is just a hint of carrot flavor and it isn't overpowering. The honey, carrot and lemon all go great together. Consider adding a splash of vodka for even more fun... :)

Ingredients:
1 1/4 cups fresh-squeezed lemon juice (from about 6-8 large lemons)
1/2 cup fresh carrot juice (3-4 large carrots)
7 cups warm water
1 cup raw light-colored honey
lots of ice, for serving

Step 1: Juicin'

Start by juicing the fresh lemons.

6-8 large whole lemons should yield 1 1/4 cups of fresh lemon juice.

I used a handheld citrus reamer and juiced the lemons into a sieve over a bowl. The sieve will catch all of the seeds and most of the pulp (if you like a pulp-y lemonade, go ahead and add the pulp back in).

Next, use a juicer to juice 4 medium-sized carrots to yield 1/2 cup of carrot juice. Alternately, if you don't have a juicer, you can run the carrots through a food processor and then squeeze the pulp in cheesecloth to get the juice out (if you do it this way, you will likely need more carrots).

Step 2: Honey Water

I prefer raw honey in order to get the maximum health benefits. Look at the beautiful honey- you can even see flecks of "bee debris" in it! That's how you know you've got the really good stuff.

Using honey to sweeten this lemonade not only makes it yummy, but adds in nutrients and great health properties as well. It is very hydrating on a hot day!


Place 7 cups of warm water (my hot tap water was plenty warm) into a bowl and add in the honey. Whisk until honey is completely dissolved.

Step 3: Mix, Chill, Serve

Combine the honey water, lemon juice and carrot juice in pitcher and chill in the refrigerator until cool (at least an hour).

Serve over ice and enjoy!
