Introduction: Hot Jalapeno Chile Molido
Hot Jalapeno Chile Molido is green mexican salsa made from pureeing tomatoes, jalapenos, onions, garlic, green coriander leaves and flavored with lemon juice and salt.
Traditionally this salsa is made from red tomatoes, but if they are not available you can also substitute them with green tomatoes. This will make the salsa taste different than the traditional version, but still extremely tasty.
In this recipe I roast the vegetables before pureeing them which gives them it a slightly smoky flavor and a darker color. You can also make this salsa by pureeing raw vegetables if you like. This salsa can be enjoyed with tortilla chips, tacos or burritos.
Supplies
Jalapeno – 5
Tomatoes – 2
Onion – ½ small (sliced)
Garlic cloves – 2 to 3
Green Coriander Leaves - a handful
Olive Oil – as required
Lemon Juice – 2 tablespoon
Salt – to taste
Step 1: Roast the Jalapenos, Onions and Tomatoes
In a skillet heat olive oil, add jalapeños, tomatoes, onions and start roasting them. Once they are done, peel the tomatoes and dice them.
Step 2: Blend the Vegetables
Transfer roasted vegetables (tomatoes, jalapenos, onions), garlic and handful coriander leaves to a food processor or blender and make a puree. Now add lemon juice and salt. Mix well.
Step 3: Serving
Transfer the molido into a serving bowl and serve it with the tortilla chips.
