Introduction: Paneer Tikka With Veggie Burger

Paneer Tikka is one of my favourite Indian restaurant dishes. If you’ve never had it before, it’s cooked in a hot and smokey tandoor oven, with blackened edges and the delicious firm cheese squeak like halloumi (apart from the texture is a little bouncier maybe?). In summer , we love to have it with the veggie burger in dinner.

For Paneer Tikka Marination :

Yogurt – ¼ Cup

Tandoori Masala – 1-1/2 tbsp

Paneer – ¼ Cup (cut into cubes)

Onion – 1 (cut into cubes)

Green Pepper – 1 (cut into cubes)

Red Bell Pepper – 1 (cut into cubes)

Salt – to taste

Kashmiri Red Chilli Powder – 1-1/2 tsp

Lemon juice – 1-1/2 tsp

Oil – 1 tsp

For Veggie Burger ;

Potato Patties – 4

Burger Buns – 4

Cheese Slices - 4

Lettuce – as required

Onion – 1 (cut into rounds)

Tomato – 1 (cut into rounds)

Tomato Ketchup – as required

Coriander and Mint Chutney – as required

Step 1: for Paneer Tikka :

Take a bowl, add yogurt, lemon juice, tandoori masala, salt, Kashmiri red chilli powder. Mix well. Now add oil and mix well. Now add Paneer, green and red bell pepper and onions. Give a mix gently. Cover it and keep it in the refrigerator for atleast an hour. Arrange into skewers, alternating vegetables with paneer. Preheat the BBQ grill to the hottest setting. Place the skewers on a rack. Cook for 15 - 20 minutes, turning once, until browned and golden all over. Now remove paneer tikka from the skewers.

Step 2: for Veggie Burger :

Place lower part of bun in a plate and put some tomato ketchup. Now place some lettuce, tomatoes, onions , cheese slice and potato patty over it. Now take the upper part of the bun and spread some coriander and mint chutney and place it over the prepared bun (with veggies and patty)

Step 3: for Serving :

Serve hot paneer tikka with veggie burger with coriander and mint chutney
