This is a quick and easy late night snack or a great side dish for a party.

Step 1: First We Need to Make the Sauce.

In a bowl add:

  • 2 Tbsp of mayonnaise
  • 1 Tbsp ketchup
  • 1 Tsp Sriracha

Mix it all together.

Place in the fridge until needed.

Step 2: Next Dice One Onion.

Then roughly chopped one stick of chorizo.

Chop four strips of bacon.

Step 3: Heat a Pan Over Medium, Add Some Oil.

Fry off the onions until they begin to soften.

You’ll need a pan that can be placed in the oven.

Add the chorizo before adding the bacon.

Fry the bacon and chorizo until it becomes crispy and the onion browns.

Take it off the heat and set the onion, chorizo and bacon to one side.

Step 4: Deep Fry Your Fries at 350f or 170c, for a Recipe Like This I Normally Use Frozen Fries.

Drain the fries before seasoning with salt, I’m using an Aussie Favourite Chicken Salt.

I’m working on a recipe for chicken salt that I hope to be able to share soon.

Step 5: While Your Fires Are Still Nice and Hot, Place Them on the Pan That We Cook the Onion, Chorizo and Bacon.

Then spread over the fries the onion, chorizo and bacon pieces.

Next, cover with grated cheddar cheese.

Step 6: Place the Pan Under the Grill for a Few Minutes Just to Melt the Cheese.

Step 7: Top With the Sauce and Chives.

The crispy fries combine with the melt cheese and the crispy chorizo and bacon make this one delicious snack.
