Place 2 loaves of frozen bread dough on a plate and cover with a piece of cling wrap sprayed with cooking spray. Let sit on counter at room temperature for 8-10 hours to rise.
Once risen, use your hands to roll out each loaf of bread on a piece of wax paper and evenly spread about 2 tablespoons of butter onto the dough.
Mix together two tablespoons sugar and two tablespoons cinnamon in a bowl.
Sprinkle cinnamon sugar mixture evenly over buttered dough.
Roll each loaf into a log-like shape.
Use a knife to cut the log into 1- inch pieces.
Place pieces into the bottom of a greased 9 x 13 cake pan.
In a medium saucepan, place one stick of butter, one cup brown sugar, and one cup of vanilla ice cream.
Heat on medium, stirring frequently, until completely melted. It should be smooth and caramel-colored with no lumps.
Pour sauce evenly over rolls in the cake pan.
Cover rolls with cling wrap and place in the refrigerator overnight.
Rolls will have risen to about the height of the pan by morning.
Remove cling wrap and bake rolls in preheated oven at 350 degrees for 30 minutes or until golden brown. You will know the rolls are done when the tops are beginning to look crispy.
Flip over the pan of rolls onto a cookie sheet to allow the caramel to seep into the rolls.
Remove pan and enjoy!
