Introduction: How to Make Chicken Enchiladas

This is a family recipe that everyone enjoys.

Step 1: Boil 2 1/2 Cups Chopped Chicken

If boiling on a stove top, then leave for about 25 minutes. I boiled mine in an insta-pot and it only took about 10 minutes; I recommend getting an insta-pot because it cooks foods quickly.

Step 2: Chop 1 Cup Colby-jack Cheese, 1 Cup Onion, 1/2 Cup Tomatoes, 1/2 Cup Black Olives, and 1/2 Cup Green Onion

Step 3: Cook Chopped Onion, 1 Teaspoon Coriander, 1/4 Teaspoon Pepper, and 4 Cloves Minced Garlic in 2 Tablespoons Margarine or Butter

Step 4: Stir 3 Tablespoons Flour Into 8 Ounces Sour Cream

Step 5: Add Flour/sour Cream Mixture, 1 3/4 Cups Chicken Broth, and 4 Ounces Canned Diced Green Chili Peppers to Onion Mixture From Step 3

Step 6: Stir 1/2 Cup of the Sauce Into Chicken

Step 7: Place About 1/4 Cup Filling Inside 12 Flour Torillas

Step 8: Arrange Rolled Up Tortillas in a Lightly Greased Baking Dish

Step 9: Top With Remaining Sauce

Step 10: Sprinkle With Cheese

Step 11: Bake, Covered, in a 350 Degree Oven for About 35 Minutes or Until Heated Through

Step 12: Top With Black Olives, Tomatoes, and Green Onions
