Introduction: How to Make Coconut Lemon Macaroons

These delicious macaroon cookies are a great way to celebrate at any party and are enjoyable anywhere at any time! To start off, here are the ingredients you will need to make these delicious cookies!

1 - ⅓ cup of Sweetened Shredded Coconut

⅓ cup of Sugar

½ tsp of Vanilla Extract

2-3 Egg whites (at room temperature)

⅛ tsp of Salt

1 - ½ tsp of Lemon Zest

2 tbsp of All-Purpose Flour

Step 1: Preheating

Preheat the oven to 325 degrees (F).

Step 2: Getting Ready

Prepare some baking pans.

Lay some parchment paper in your baking pans. Put your prepared pan(s) aside.

Step 3: Making Meringue

Whisk your room temperature egg whites and vanilla extract.

You will know when to stop whisking when the meringue has a stiff peak when you pull the beater up. Do not over beat! It will make the meringue liquidy instead of fluffy or soft.

Step 4: Coconut Mixture

In another bowl, mix together your sweetened shredded coconut, lemon zest, sugar, flour and salt.

You will know when to stop mixing when all the ingredients are fully incorporated and/or looks like the picture above with a "grainy" consistency.

Step 5: All Together

Fold your meringue (egg whites and vanilla mixture) GENTLY to your shredded coconut mixture.

Do not mix the meringue into the other mixture! Only folding! If you mix, you will lose the softness in the cookies.

Step 6: Setting for Baking

Using a small spoon or a small ice cream scoop, scoop the mixture and drop them into the prepared pans that you put aside in step two.

Make sure they have spread far apart (the scoops) so they do not mush into each other as they bake.

Step 7: Baking

Bake at 325 degrees (F) for around 15-20 minutes.

Bake until “golden brown”.

Please be careful when baking because these cookies can be very easily burned. To prevent that, keep an eye on them as they bake. Be cautious when taking out the pan of cookies when done so you do not burn yourself.

Step 8: Cooling

Once done baking, take out of the oven and cool on a cooling rack.

This can take 5-10 minutes.

Step 9: And Now You Are Done!

You will be left with some delicious lemon coconut macaroon cookies! Best served with some ice cream. Sweet!
