Introduction: How to Make Easy Spicy Baked Eggs (Shakshuka)

This gorgeous little number is a breakfast that will definitely warm your cockles! Spicy Baked Eggs (commonly known as Shakshuka) is a wonderfully cheap and simple dish to make without compromising at all on flavour or satisfaction. A spicy tomato & pepper base topped with a beautiful runny egg, this is a taste sensation waiting to happen!

Here is what you will need to serve 2.

  • 1 tbsp Olive Oil
  • 1 x Small Onion, Finely Chopped
  • 2 x Cloves of Garlic, Finely Chopped
  • 1 x Red Pepper, Roughly Chopped
  • 2 tbsp Harissa Paste
  • 1/2 tsp Smoked Paprika
  • 1 x 400g Tin of Chopped Tomatoes
  • Salt
  • 2 x Eggs
  • Chopped Fresh Parsley, To Serve (Optional)

Essential Equipment

  • 1 Large or 2 Small Oven Proof or Cast Iron Pans

Step 1: Getting Started

Preheat your oven to 200°C/Fan 190°C.

If you haven’t already, chop the onion, garlic & pepper and set to one side until needed. Heat a non stick oven proof frying pan over a medium heat. When the pan is hot, add in the olive oil & the onion. Fry for a few minutes until softened & starting to turn golden. Then add in the garlic and continue cooking, stirring constantly, for 1-2 minutes.

Step 2: The Spicy Tomatoes

Add in the chopped pepper, harissa paste & the paprika and give it a really good stir. Fry for approx 5 minutes until the pepper starts to soften a little.

Step 3: The Spicy Tomatoes

Pour in the tinned tomatoes and give it a really good mix. Simmer for 5-10 minutes until it’s nice and thick.

Step 4: Assembly/The Bake

Season to taste with salt then you can do one of two things. Either leave the tomatoes in your oven proof pan and crack over two eggs or you can split it between two oven proof dishes/small cast iron pans and crack an egg into each one.

Bake in the centre of the preheated oven for 6-8 minutes until the egg is cooked to your liking. (Open the oven and have a look in the last couple of minutes as it doesn’t take much for the egg to become over done!)

Step 5: Tadah!

Serve immediately. If you like you can sprinkle over some chopped parsley and use some nice crusty bread to dunk right in there!

Come on, you can’t tell me these Spicy Baked Eggs aren’t beautiful… just look at it!! The flavour is utterly amazing. It definitely has a good kick to it so if you’re not a huge fan of heat, go easy on that harissa paste. You know you need this on your shopping list for next weekend…
