Introduction: How to Make MERINGUE COOKIES | Orange Creamsicle Meringues Cookie Recipe

The warmer months are almost upon us and Orange Creamsicles scream summer for me. Since it is not yet summer and meringue cookies are awesome anytime of the year, I thought I would combined the two. These meringue cookies are light and crisp cloud-like, they melt in your mouth and they are dipped in white chocolate to give them that popular Orange Creamsicle taste. Orange Creamsicle also happen to be one of my husbands favorite ice creams (that I never buy) so I thought this was a fun compromise until summer. Step 1: Ingredients

  • 4 egg whites, room temperature
  • 1 Tablespoon lemon juice (15 g)
  • 1 Tablespoon corn starch (9 g)
  • 1 cup granulated sugar (192 g)
  • 1 (3 oz) Orange JELL-O gelatin powder
  • 8 oz. of white candy melts

Step 2: Whisk Egg Whites

Preheat oven to 225 degrees F and line two more baking sheets with parchment paper.

In a clean and dry mixing bowl, whisk egg whites with electric mixer until foamy. I am using my standing mixer because it is a lot easier to whisk up but a hand mixture works as well.

Step 3: Add in Lemon Juice and Corn Starch

Add in lemon juice and corn starch and continue to beat for about a minute until soft peaks begin to form. I used vinegar instead of the lemon juice but I found that you can taste the vinegar in the finish product and I wasn't too happy about that.

Step 4: Add Sugar and Jell-o

Slowly add in sugar 1 tablespoon at a time while mixer is on high and continue beating while adding in JELL-O powder 1 tablespoon at a time also. Beat until stiff peaks form and all the sugar has dissolved.

Step 5: Pipe Meringues

Fill pastry bags with meringue and pipe onto the parchment paper in swirls (you can use your favorite tip or just spoon the meringue into the parchment paper). I used two different tips and tried a few with spoons by spooning it onto the parchment paper.

Step 6: Bake

Place in oven and bake for 90 minutes. Turn oven off and leave in oven for several hours to cool completely and harden.

Step 7: Melt Chocolate

Melt white candy melts in microwave in 30 second intervolves stirring in between until melted (you can do this over a double boiler also).

Step 8: Dip Meringues

Once the meringues are cooled, dip bottoms or tops into the melted chocolate. Allow to set.

Step 9: Enjoy!
