Introduction: How to Make Oreo Nutella Brownie Bites

Don't you just hate it  find a really good looking recipe that turns out to be a lie?  When you've measured and timed everything perfectly, and still the finished result is lacking!  (Like any recipe that says you can caramelize onions in 5 minutes.)  Well, I'm here to help.  

I found this wicked recipe online for how to make Oreo Nutella Brownie Bites. Right? And man, was I was super disappointed by the results.  After following the recipe to a tee, the resulting brownie bites were flat, dense, and underbaked.  By A LOT.  A regular Oreo does not stand out nearly enough in flavor.  And there was no way to get 12 of them from the amounts suggested.  Super disappointing.

Fortunately, this was one morning where I was channeling more patience than usual, and decided to stick with the project (you would die to know how many cupcakes go straight to compost from this kitchen).  The final result was pretty tasty.  Brownies are really dense to begin with, but adding an Oreo to the middle makes them even denser.  So to bake them thorough without drying them out, lower the temperature and extend the baking time to make sure you don't end up with goo or rocks.  Next time, I'll experiment without the extra egg white, and adding more sugar to make a moister result.

All of that said, these are super simple to make, and I made like three batches over the weekend.  Even just making them is addictive - wait until you taste them.

Here is the improved recipe for making these crazy Oreo Nutella Brownie Bites (which should have been a thing long ago).  New measurements, new baking times.  Go to town.  

Ingredients:
  • 1 jar Nutella (370g, 13 oz)
  • 3 eggs
  • 1 cup (120g) flour
  • pinch of salt
  • 12 Double Stuf Oreos
Special Materials:
  • Scale
  • Cupcake pan
  • Cupcake liners
  • Cooling Rack

Directions:

Preheat oven to 350F (180C)
Line 12 muffin tins with paper liners.

Mix together the Nutella, eggs, flour and salt with a wooden spoon until all of the ingredients are just incorporated. 
Pour half of the brownie mixture into the cups. 
Add on Oreo to each cup.
Top off each cup with remaining brownie mix.

Bake for 20 - 25 minutes, checking for doneness early.   It's tricky to see if the brownie bites are baked through, as there is an Oreo in the center which will impede you toothpick test.   When the toothpick comes out clean, your bites are done.

Let brownie bites cool in the pan for 5 minutes, then move to cooling rack to finish.
