Introduction: How to Make Sweet Potato Casserole With Marshmallows and Streusel Topping

It is almost Thanksgiving and here is another side dish idea for your dinner table, although I think this can technically be a dessert (because it is sweet). Hopefully this recipe inspires you to make something yummy this week whether you are celebrating Thanksgiving or not, this recipe is also perfect for Christmas time. This Sweet Potato Casserole has all the wonderful flavors of fall/winter time (topped with marshmallow goodness and streusel topping) not to mention that the smell of this casserole is incredible! Supplies

Step 1: Ingredients

Mashed Sweet Potatoes

  • 2 pounds sweet potatoes cleaned
  • 4 tablespoons melted butter
  • 1/4 cup milk
  • 1/4 cup packed brown sugar
  • 3 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • cooking spray

Topping

  • 4 tablespoons unsalted butter softened
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour optional: for a sturdier streusel add and additional heaping tablespoon of flour
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup chopped pecans
  • 2 -3 cups mini marshmallows or more, if you'd like

Step 2: Prick Sweet Potatoes

Preheat the oven to 350 F degrees. Line a sheet pan with foil and coat with cooking spray. Prick the potatoes with a fork and place them on the pan. Make sure that your sweet potatoes have an orange flesh and you can see if they do by gently removing the skin and the flesh should be orange.

Step 3: Bake and Scoop the Inside of Potatoes Out

Bake the potatoes until tender, 45 minutes to an hour (a knife or fork should go in easily when the sweet potatoes are done baking). When the potatoes are cool enough to handle, cut them open, scoop out the insides and place the potatoes in a large bowl.

Step 4: Add in All the Seasonings to Sweet Potatoes

Add the 4 tablespoons of butter, milk, brown sugar, maple syrup, cinnamon, egg, vanilla and salt to the bowl. The order isn't important as long as they all get into the bowl.

Step 5: Mash Potatoes

Use a potato masher or hand mixer to mash or beat the potatoes until mostly smooth. I started with a potato masher and switched to a hand held mixer.

Step 6: First Bake

Grease a 9-inch square pan or 2-quart baking dish with cooking spray. Spread the sweet potato mixture evenly in the pan. Bake for 15 minutes.

Step 7: ​Prepare Topping

Prepare the topping. In a medium bowl, combine butter, brown sugar, flour, cinnamon, salt, and pecans. Stir until thoroughly combined.

Step 8: Top Potato Mixture

Once you pulled the sweet potato out the oven, top the sweet potato mixture with half the marshmallows, then sprinkle half the streusel over the marshmallows. Top with the other half of the marshmallows and sprinkle the remaining streusel over the top.

Step 9: Second Bake

Place back into the oven for 8-15 minutes (I placed my baking dish onto a cookie sheet to avoid a mess), until the topping is bubbly and brown. You can also place your oven in the broil setting and allow it to broil for the last 2-3 mins.
