· Large Bowl (Chicken must be able to fit in this bowl)

· Freezer bags (Ziploc)

(All of these items can be found at your local Wal-Mart)

Step 2: Thawing Out the Chicken

Grab the bowl that you are using and fill it with water that is below 40 degrees. Place the chicken in bag that sealed and leak proof the bowl and let it thaw out for 30 minutes (if frozen) in the bowl. If already thawed out the chicken is ready proceed to step. There are many ways to thaw out the chicken, we recommend placing the chicken in a sealed leak proof bag and put the bag in a bowl of cold water below 40 degrees. You may also put the bag in the refrigerator to thaw.

Warning: Do not thaw chicken in water above 40 degrees and try not to thaw it without a bag. Doing both of these things can leave the chicken covered in a lot of bacteria.

Step 3: Soak in Vinegar

Try to dump as much of the water, in the bowl, out as you can so there is barely any left along with the chicken. You may also use another bowl and simply place the chicken from the thawing bowl to the new bowl. Now clean chicken with ½ cup of white vinegar and 1 cup of water mixed together, in the bowl. Let the chicken soak for about 3 to 5 minutes. This will get rid of the germs and bacteria on the chicken.

Step 4: Wash the Chicken Off

Again empty the bowl of any excess water and vinegar mixture and wash the chicken under warm water. You can do this with your hands under a faucet. The chicken can sometimes have some yellow parts after being soaked in the vinegar and this would be the best time to try to get those parts off the chicken. The yellow parts are simply fat and are not harmful but can make the chicken look a little weird.

Step 5: Seasoning the Chicken

Put chicken in the bowl with as much water as possible gone. This bowl may be the same bowl you have been using or a brand new bowl, just make sure it has little water in it. Sprinkle 1 ¼ tablespoon of the Lawry’s season salt on chicken then rub the seasoning in with your hands.

Warning-When performing this step keep seasoning salt away from eyes as it will burn if the salt gets in your eyes.

Step 6: Seasoning the Chicken Part II

Sprinkle ¼ teaspoon of Gel Superior black pepper then rub the seasoning in with your hand.

Warning-When performing this step keep black pepper away from eyes as it will burn if the black pepper gets in your eyes.

Step 7: Seasoning Part III

Put 4 tablespoons of Jerk Seasoning on the chicken then rub seasoning in with your hands.

Warning-When performing this step keep Jerk Seasoning away from eyes as it will burn if the seasoning gets in your eyes.

Step 8: Let the Chicken Marinate

Place saran wrap or aluminum foil over your bowl, covering all of your seasoned chicken. Place the bowl of seasoned chicken in the refrigerator to marinate for 20-25 minutes. While the chicken is marinating be sure to keep it covered with either saran wrap or aluminum foil. If you want the Jerk Chicken to be more spicy than mild then leave the chicken in the refrigerator for longer than the time allotted. Letting the chicken marinate for 1 to 3 hours will produce a lot more of a spicy Jerk Chicken.

Step 9: Prep the Oven (or Grill)

While chicken is marinating preheat oven at 375°F. If you are using a grill preheat the grill to medium high.

Step 10: Prep the Chicken for the Oven

After the chicken has marinated in the refrigerator for 20-25 minutes you can take it out and put the chicken in the 8x8 pan keeping each piece of chicken as spaced out as much as possible. If you are going to cook on a grill you can put the chicken on a dish and take it right to the grill to start grilling.

Step 11: Add a Little Water

Make sure excess seasoning is out of the bowl. You want to have all the seasoning in the pan with the chicken when it is ready to cook. After all the chicken is in the pan add some water to the pan so the chicken remains juicy when it is cooking in the oven.

Step 12: Cover the Chicken

Before putting the chicken in the oven, it must be covered be covered with aluminum foil. After covering the pan with the aluminum foil, poke tiny holes in the foil with a fork to help the chicken cook.

Step 13: Put the Chicken in the Oven

Warning-This step is where you should use or oven mitt or piece of clothing you use to prevent burns when using a oven. If you touch the oven with your bare hands you will be burned.

Make sure the oven is heated up to 375 degrees and place the pan of chicken into the oven for 30 minutes.

Step 14: Check Chicken After 30 Minutes

After 30 minutes take the aluminum foil off the pan and leave the aluminum foil off. Leave the chicken in the oven without the aluminum foil for another 30 minutes.

Warning-This step is where you should use or oven mitt or piece of clothing you use to prevent burns when using a oven. If you touch the oven with your bare hands you will be burned.

Step 15: Take the Chicken Out of the Oven

After another 30 minutes have passed your chicken should be ready. Take the pan out of the oven and inspect the chicken. If it is brown and the meat is falling off the bone it is ready to eat. If it is not brown you can put it back into the oven for 10 minutes and check it again.

If you were grilling the chicken just grill both sides until they are brown and crispy. After they are brown and crispy turn the grill down and let them grill for another 10-15 minutes until they are cooked thoroughly.

Enjoy your Jerk Chicken!
