Introduction: Ice Cream Tacos

Looking for the perfect dessert for a summer party?

Ice cream can get a little boring on its own, but here's a fun idea to liven things up!

Serve ice cream tacos!

These customizable treats stuff ice cream in sweet crispy shells and top it with a rich chocolate ganache and a dash of sprinkles. These would be perfect for a pool party or serve as a fun ending for a summer dinner.

Step 1: Ingredients for Taco Shell

2 eggs

3/4 cup + 1Tbsp white sugar

1/3 cup all-purpose flour

1/4 cup butter, melted and cooled

3 Tbsp milk

1 teaspoon vanilla extract

PAM or vegetable oil for greasing pans

Step 2: Getting the Batter Ready

Whisk eggs and sugar together until frothy.You want to make sure that most of the sugar has dissolved.

Add in the flour and whisk to combine.

Add in the rest of the ingredients excluding the oil and whisk thoroughly to combine. The finished batter should resemble crepe batter (like thinned out pancake batter).

Step 3: Cooking the Taco Shells

Turn the stove to medium low heat (I put mine more on the low side, but depending on your stove you may want to adjust the heat.)

Oil the pan and pour in about 1/4 cup of batter and quickly swirl the pan so the batter covers the entire bottom of the pan.

Cook for about 2 minutes. When the edges begin to brown, flip the shell and cook on the other side. Cook for another 1-2 minutes until the other side is nicely browned too.

Step 4: Shaping the Shells

Working quickly, fold the shells over a rubber spatula such that they form the shape of a taco.

Once the shells have cooled a bit, you can remove the spatula and place a small wad of tin foil in the shell to help it maintain its shape.

When the shell has cooled completely, set aside until you have finished making all the shells.

Step 5: Assembling the Tacos (Part 1)

Gather all the ingredients:

-taco shells

-thawed ice cream

-condiments (optional)

And the materials:

-knives and spoons

-tray that fits in the freezer

Step 6: Assembling the Tacos (Part 2)

Take a taco shell and spread the desired condiments inside. Fill with ice cream.

Quickly, place the taco in the tray and move the tray into the freezer.

You will need to keep the filled tacos in the freezer so they don't melt while you work on filling the rest of them. Every time you finish filling a taco, run it to the tray in the freezer to stay chilled.

Step 7: Assembling the Tacos (Part 3)

Once finished filling the tacos, let them rest in the freezer while you work on the chocolate ganache.

Ingredients:

1 1/2 cups chocolate chips

1/2 cup heavy whipping cream.

Mix ingredients in a microwave safe bowl and microwave in 30 second intervals until the ganache is smooth.

Work with each taco individually:

Remove a taco from the freezer and coat the middle portion with ganache. Quickly add sprinkles on top, if desired and return taco to the freezer.

Repeat the process for the remainder of your tacos!

Step 8: Fiesta Time!

Keep your tacos in the freezer for at least 10 minutes before serving just to make sure the chocolate has hardened and that the ice cream is firm.

Once you're ready to serve, put them on a plate to share!
