Introduction: Italian Dinner Cooked on the Grill
There are no bounds to the foods that I will cook on the grill. I love the smoky flavor that the grill gives food and I avoid using my stove or oven in the summer. This pasta and garlic bread dish is really easy and scrumptious.
Step 1: Prepare the Garlic Bread
Ingredients:
1/4 cup butter
2 tablespoons parmesan cheese
1/4 t dried parsley
1/2 t garlic powder
1 loaf Italian bread, sliced lengthwise and cut in half
Combine the first 4 ingredients in a small bowl. Spread on the Italian bread and set aside.
Step 2: Prepare Pasta
Ingredients:
12 oz pasta
2 cups chicken broth
2 tomatoes (I used yellow tomatoes)
1/2 onion, diced
4 garlic cloves, minced
2 t sea salt
1 T oilve oil
Dash of crushed red pepper (optional)
1 C baby spinach
Parmesan cheese for serving
Instructions:
In a cast iron pan, combine the first 8 ingredients.
Step 3: Prepare Fire and Cook Pasta
Get the fire started in your grill. Once hot, place the pan on the grill and bring it to simmer. Stir periodically. Once the liquid is almost all gone, stir in the spinach.
Step 4: Toast Garlic Bread
Put the garlic bread on the fire (butter side up) until butter is melted and bread is crusty.
Step 5: Remove From Heat and Eat
The pasta is read when the liquid is gone and spinach is wilted. Sprinkle with parmesan to serve and enjoy with the garlic toast.
