Introduction: Jelly Belly® Flavored Gelatin Dessert
Sometimes I am just not in the mood for making a traditional flavored gelatin dessert. That is why I always keep Knox® gelatin stocked in my pantry. The following is a gelatin dessert made from popcorn flavored Jelly-Belly® jelly beans.
Supplies
- 1/2 cup popcorn flavored Jelly Belly® jelly beans
- 2 cups water (separated)
- 2 - 7-gram packets of Knox gelatin
- deep 2-quart pot
- blender
- spoon
- mixing bowl
- fine sieve
Step 1: Dissolve Knox Gelatin (1 of 2)
Place 1/4 cup cold water in a small bowl and sprinkle with gelatin while whisking with a fork. Set aside for 5 minutes or until spongy. Place remaining 3/4 cup water in freezer to chill.
Step 2: Make Jelly Bean Mixture
Pour 1 cup water into blender container. Add jelly beans to water. Blend until jelly beans are completely dissolved and incorporated into a smooth mixture.
Step 3: Boil Jelly Bean Mixture
Transfer jelly bean mixture to deep pot. Cook on medium high heat until boiling.
Step 4: Dissolve Knox® Gelatin (2 of 2)
Using a fine sieve (optional), pour hot jelly bean mixture over softened gelatin and stir until the gelatin dissolves. Cool slightly before adding chilled water to the jelly bean mixture. Stir until completely mixed.
Step 5: Refrigerate & Serve
If desired, pour dissolved mixture into bowl or serving dish (optional). Carefully place mixture in refrigerator and chill 4 hours or until firm. Enjoy!

Sounds like quite the interesting dessert! How strong would you say the flavor is?

I was pleased with how well the popcorn flavor carried over to the gelatin. Next time I will add an additional 1/4 c of Jelly Belly jellybeans
