Introduction: Jelly Surprise Cinnamon Doughnut Muffins

About: Hi, I'm Lizzy Bennet! Not the one from Longbourn, but a Fitzwilliam Darcy fan nonetheless. I am a teacher and a vinedresser by profession, and enjoy reading and cooking in my spare time.

These easy yet delicious muffins are a family favorite. With little trouble, you can impress guests with jam-filled muffins!

Supplies

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 1 egg
  • 3/4 cup milk
  • strawberry or raspberry jam - approximately 2 tablespoons

Topping:

  • 1/4 cup butter, melted
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon

Step 1: Mix the Dry Ingredients

Mix the flour, baking powder, salt, nutmeg, and cinnamon.

Step 2: Mix the Wet Ingredients

In a separate bowl, whisk the sugar, oil, egg, and milk.

Step 3: Add Wet Ingredients to Dry

Add the wet ingredients to the dry ingredients and mix just until well blended.

Step 4: Prepare Muffin Cups

Insert paper muffin liners into 10-12 muffin tins (recipe says 10; I squeezed 12 out of it).

Step 5: Fill Cups Halfway With Batter

Fill each muffin tin halfway with batter.

Step 6: Top With Jam

Put a half teaspoon of jam in the middle of each muffin-to-be.

Step 7: Fill With Remaining Batter

Put a few tablespoons of the remaining batter on top of the jam in each muffin cup.

Step 8: Bake

Bake the muffins at 350 degrees Fahrenheit for 20-25 minutes, or until golden brown.

Step 9: Get Fancy

Dip the tops of the baked muffins first in melted butter, then in the cinnamon-sugar mixture.

Step 10: Enjoy!
