Step 1: KERALA SAMBAR
Sambar is a popular South Indian dish. It is vegetarian dish usually served with steamed rice, idly, dosa etc.
It is a healthy dish because it contains almost all the vegetables, natural seeds. And no other chemical ingredients added in it for the preparation.
Step 2: Ingredients
- Grated Coconut - 200 g
- Small Onion - 50g or (5 - 6 pieces)
- Garlic - 4 cloves
- Red Chilli(Dried) - 20 g (10 pieces)
- Coriander seed - 20 g
- Black Pepper - 1/4 Tea-Spoon
- Fenugreek seed - 1/2 Tea-Spoon
- Chana Dal (Split Bengal gram) - 1 Tea-Spoon
- Cumin - 1 pinch
- Asafoetida - 10 g
- Curry Leaves
- Coconut Oil - 100g
- Split pigeon pea - 150 g
- Pumpkin - 150 g
- Elephant Foot Yam - 150 g
- Wax gourd - 200 g
- Okra(Ladies' fingers) - 100g
- Vegetable Drumstick - 100g
- Onion Big - 150 g (1-2 pieces)
- Tomato - 150 g
- Tamarind - 50 g
- Mustard Seed - 1/2 Tea-Spoon
- Turmeric Powder - 1/2 Tea-Spoon
- Salt - As per requirement
Step 3: Preparation Step - 1
Heat oil in the pan, when it become medium hot, add Asafoetida. After some time add Garlic, Onion, Fenugreek, Chana dal, Pepper, Red chilli, Coriander seed and Curry leaves to it. Stir until the mix get brown color, then add grated coconut to it. Continue it for become brown. Then add Cumin to it and allow it to cool. Grind the mix with a grinder and make paste.
Step 4: Preparation Step - 2
Take about 1 Litre of water in a pot. Put split Pigeon pea/dal to it after the water get boiled. After dal become cooked, add the vegetables such as Pumpkin, Wax gourd, Okra [Ladies’ fingers], Vegetable Drumstick, Onion Big, Tomato, Elephant Foot Yam. Also add Turmeric Powder and Salt. Wait until the vegetables get cooked, then add the Tamarind. Then add the grinded mix to it.
Step 5: Preparation Step - 3
Take another pan add some Coconut Oil, when it gets hot add red chilli, mustard and curry leaves to it. Stir well until it gets cooked. Then the mix directly add to the sambar pot.
