Kuzhi paniyaram are dumplings made from rice , urad dal & fenugreek seeds . Its an authentic Chettinad dish .A special pan is used to make paniyaram and its called as paniyaram chatti . In Indian market one gets both non-stick as well metal pans..

Paniyarams are also a south indian tiffin or breakfast snack and they are healthy like most south indian food.

You can make 2 versions of paniyaram with the same batter.. Isn't it cool :) :)


Ingredients :

1) Raw Rice - 1 Cup

2) Idly Rice - 3/4 Cup

3) Urad Dal - 1/4 Cup

4) Fenugreek Seed -1/2 Tsp

5) Water needed to grind.

Step 1: Grinding Batter

1) Wash the rice , dal and fenugreek seeds and soak it for minimum 4 - 5 hours (soak fenugreek seeds along with the dal)

2) Then grind them together in a blender (I used wet grinder) by adding water little by little till they are ground into a smooth consistency.

3) Transfer it to a clean container and grind the soaked rice to smooth consistency.

4) Place it in a warm place and allow it to ferment.(8 - 12 hours)

kuzhi paniyaram batter is ready!!!

Step 2: Sweet Version

Ingredients for Sweet Kuzhi paniyaram

  • Raw Sugar as per your taste
  • little water


  1. Heat a pan in a low flame.Add the required amount of Raw sugar add a little bit of water
  2. Let the raw sugar melt, once melted Pour it into portion of batter taken

Making Sweet Paniyaram

Heat the paniyaram Chatti/Tawa.

Add a few drops of oil.

Pour spoonful of the batter 3/4 of the paniyaram mould.

Allow the batter to cook for 3-4 minutes on a low medium flame .

Turn each kuzhi paniyaram with the help of a wooden skewer or spoon and drizzle a little more oil .

Now allow the other side to get cooked and crisp. turn once or twice for uniform cooking.

Remove paniyaram and keep in a vessel/container so that they stay warm.

Step 3: Salt Version

Ingredients for tempering Kuzhi Paniyaram (Salt Version ) Recipe

  1. Oil 2 teaspoons
  2. Mustard seeds 1/4 teaspoon
  3. Urad dal 1/4 teaspoon
  4. Curry leaves chopped 10-12
  5. Onion finely chopped 1 large
  6. Green chillies finely chopped 2-3
  7. Salt to taste

Method :

  1. Heat two teaspoons oil in a pan, add mustard seeds, urad dal, curry leaves, onion and green chillies. Saute for two to three minutes. Add tempering to the portion of batter taken . Mix well.
  2. Heat the paniyaram tawa over medium heat and put 2 drops of oil each dent with a little oil. Pour 3/4th batter in each dent, and cook for four to five minutes till the underside is done.
  3. Turn them over with the help of a wooden skewer or spoon and drizzle a little more oil and continue to cook for three to four minutes or until both the sides are evenly cooked. Prepare more paniyarams similar way..
  4. Remove paniyaram and keep in a vessel/container so that they stay warm.

  5. Serve hot with chutney/Idli Podi

Note :

If the batters is fermented its a quick task to make it as breakfast/snack..

These kuzhi paniyaram are also good as tiffin box snack or picnic snack.

You can either use Raw sugar/Jaggery
