Introduction: Lamingtons
Here's a quick recipe that I like to make for any occasion. It makes an impressive afternoon tea or dessert option. It always reminds me of home.
Step 1: Ingredients
- 1/4 cup Boiling Water
- 1/8 cup Cocoa
- 1 1/2 cups Icing Sugar
- 2 tsp Butter
- 220 - 290g Pound Cake
- 1-2 cups Coconut
Step 2: Cake
When making lamingtons I like to cheat a little bit, I use a ready made pound cake. This makes it a quicker recipe, although you can make your own cake, if you would prefer.
I normally get a plain vanilla pound cake, but if this is not available you can use any other flavour. Examples I have shown in the pictures are marble, chocolate chip and orange.
If you are making you own cake, I would recommend making a plain vanilla pound cake.
Step 3: Cutting the Cake
Cut the cake in half length ways and then in half across the middle, continuing until you have 8 rows of two.
You can of course change this to however many you would like.
Step 4: Chocolate Sauce: Ingredients
For the sauce you will need these ingredients:
- Icing sugar
- Cocoa powder
- Butter
- Water
Step 5: Making the Sauce
Place the icing sugar, cocoa powder and butter in a bowl. Pour in the 1/4 cup of boiling water and mix it together.
Step 6: Covering the Cakes
The sauce should be runny as shown in the picture above.
I generally like to set the ingredients up as shown, with the cake on a chopping board or plate, the sauce in a bowl, some coconut in a bowl and a plate to place the finished lamingtons on.
Step 7: Chocolate
Dip a piece of cake in the chocolate sauce, making sure to cover the whole cake.
I usually use a fork to avoid messy fingers.
Step 8: Coconut
Roll the cake in the coconut until fully covered.
Step 9: Serve
Refrigerate until icing sets
