Introduction: Loaded Zucchini Skins
Simple, quick, and healthy way to use up all of that zucchini that is coming out your ears!
Step 1: Ingredients
- 2 small to medium yellow zucchini
- nonstick cooking spray
- salt and pepper
- garlic powder
- shredded cheddar cheese
- real bacon crumbles
- light sour cream
- chopped green onions
Step 2:
Wash and cut the ends off your zucchini. Then cut them lengthwise in half and if you prefer a little bit smaller finger food size, I then cut those halves in half the opposite way so they wouldn't be so long.
Step 3:
Next, spray your pan with nonstick spray and then sprinkle liberally with your salt, pepper, and garlic powder. Top with an even amount of cheese and bacon crumbles and pop into a 350 degree F oven for about 12-14 minutes. Or until the cheese is bubbly and the zucchini has a little bit of give to the touch.
Step 4:
Lastly top with a dollop of sour cream and sprinkle with chopped green onions. These are such a nice fresh alternative to a heavy potato skin. Enjoy!

If you have a ridged griddle pan it works really well for this. I also like to slice the zuchinni into 1/4" thick slabs and grill them both sides and put them into a baguette with garlic mayo.

We like grilling them too, but the garlic Mayo I haven't tried. Thanks for the tip, I am going to try with the Mayo it sounds delicious!

I think green would work just fine, I just happened to have an abundance of yellow when I made these so I chose the yellow.
