Introduction: M&M Oatmeal Cream Pie Cookie Sandwiches

Step 1: Cookie Dough

115g / 1/2 Cup Unsalted Butter

150g / 3/4 Dark Brown Sugar

50g / 1/4 Cup Caster Sugar

1 Large Egg

1/2tsp Cinnamon

1/2tsp Baking Soda

1/4tsp Salt

2tsp Vanilla Extract

125g / 1 Cup All-Purpose Flour

140g / 1 2/3 Cups Oats

100g M&M's (Crispy) + Extra for Decoration

Cream the butter and then the sugar until light and fluffy. Add the egg followed by the vanilla, cinnamon, baking, soda and salt. Next add the the flour, oats and mix until the cookie dough is formed. To finish, add the M&M's and leave to chill in the fridge for 30 minutes.

Step 2: Marshmallow Fluff

1 Egg White

165g / 1/2 Cup Golden Syrup or Corn Syrup

1/4tsp Lemon Juice

Pinch Salt

65g / 2/3 Cup Icing Sugar

To make the marshmallow fluff, add the egg white, syrup, lemon juice and salt to a stand mixer and whisk until soft peaks are formed. Add the icing sugar and whisk again.

Step 3: Baking

Using a ice cream scoop, spoon out the cookie dough and place on a sheet with greaseproof paper. Add some extra M&M's and bake in an oven at 200 degrees for 10 minutes.

Leave on a wire rack to cool.

Step 4: Enjoy!

Spoon the marshmallow fluff on the base of half of the cookies and place the remaining cookies on top.
