Introduction: Mahimahi With Brown Rice and Vegetables

This is a dish that can be made and served within an hour. For those who are unfamiliar with this type of fish, this fish is also known as "dorado".

Supplies

1 cup uncooked brown rice

1/2 small bag of California blend frozen vegetables (cauliflower, broccoli, carrots)

1 bag of Mahi Mahi 2-3 cups water for brown rice

425 degree F pre-heated oven

Pot for boiling water

Aluminum foil

Baking sheet

Salt and pepper to taste

Step 1: Preheat the Oven and Start Your Brown Rice

Preheat your oven for the mahimahi at 425 degrees F. Place the fish by placing on an aluminum foil covered baking sheet. While your oven is preheating, turn your stove on and bring your water to a boil. Your brown rice will require between 2-3 cups of water. Once the water is boiling, add the rice. Turn down the heat so that the water simmers. The rice should take around 40-45 minutes to cook thoroughly. You can can add the vegetable blend to the rice for the last 7-10 minutes of the cooking process.

Step 2: While Rice Is Cooking, Bake Your Mahimahi

In a 425 degree F preheated oven, bake your fish for about 12-15 minutes. Once the fish is done, add it to the plate.

Step 3: Add the Brown Rice and Vegetables

Add the cooked brown rice and vegetables. Season as necessary. Serve.
