Introduction: McKeto
When you are on a Keto or Palio diet you often have to skip out on favorites. Here is a recipe that fits the lifestyle without having to miss out. Friends tell me these are better tasting than the ones at Micky's Place.
You will need:
1 16 oz Ramekin
2 4 oz Ramekins
3 Eggs
2 Sausage Patties (cooked)
1 Strip of Bacon (cooked)
2 TBS Butter
1 TBS lard (or Ghee or Coconut oil) <lard works best but I know. . .>
3 TBS Almond Flour
1 TBS Coconut Flour
1 Tsp Stevia
1/2 Tsp Baking Powder
Sea Salt, Pepper, Tarragon, Italian Seasoning, to taste.
Step 1: Melt Butter and Fat
Melt 1 tablespoon of butter and 1 tablespoon lard, ghee, or coconut oil in a 16 oz ramekin
Step 2: Add 1 Egg
Step 3: Almond Flour
Add 3 tablespoons of Almond Flour
Step 4: Dry Ingredients
Add 1 tablespoon coconut flour, 1 teaspoon stevia, 1/2 teaspoon baking powder, and a dash of sea salt.
Step 5: Mix and Microwave
Microwave for 2 minutes
Step 6: Finished Muffin
Remove muffin and cut in half. (optional: toast muffin)
Step 7: Melt More Butter and Season
In two 4 oz. ramekins melt 1/2 tablespoon of butter (each) and season to taste. (I use salt, pepper, tarragon, and Italian seasoning.)
Step 8: Microwave Eggs
Microwave eggs on 70% power for 90 seconds (actual cooking times and power settings will vary with your oven)
Step 9: Assemble and Enjoy
Place sausage patties, eggs, bacon and cheese on muffin and melt cheese in the microwave. Enjoy and lose weight!
