Introduction: Mini Vegan Delights

Looking for a quick bite to eat, but wanting to stay healthy enjoy these tasty treats at any hour of the day that are completely vegan! In usual cupcakes you need cow milk, and normal butter. This recipe needs NONE OF THAT! Instead I use non dairy milk, vegan margarine!! It taste even better! You can even make them into regular size cupcakes and cakes!

(Preheat Oven at 350 degrees fahrenheit)

Supplies

2 1/2 cups flour
1 1/2 cups graduated sugar
2 tsp baking powder
1tsp salt
2 cups of non-dairy milk
3/4 cups of vegetable oil
1/4 roughly cup apple cider vinegar
2 Tbsp vanilla extract

Frosting
1 cup vegan margarine
3 cups powdered sugar
1/2 cup chocolate powder
1 Tbsp vanilla extract
1-3 tablespoons milk (add more depending on consistency)

Step 1: Dry and Wet Ingredients

Mix the dry ingredients (flour, sugar, baking soda, salt) in a medium sized bowl

Mix the wet ingredients (milk, oil, apple cider vinegar, vanilla) in a small sized bowl

Step 2: Combining

Slowly incorporate the wet mixture into the dry 1 cup at a time. I recommend using a stand or hand held mixer.

Step 3: Baking

After combining the two, put them into nonstick pans or spray them with baking spray. Only fill them up 1/3-3/4 of the way.

Cook them for 8 minutes and then switch racks for another 8 minutes. For cakes do 10 each.

Step 4: Beginning the Frosting

In a medium sized bowl add the butter and vanilla until it is a very thin mixture.

Step 5: The Powders

In a separate bowl add the powdered sugar and chocolate powder and wisk.

Step 6: Incorporating

Make sure to add these together slowly. Until you get your desired consistency.

Step 7: Piping/Frosting

After this put into your desired piping bag and pipe away onto your cupcakes!!

Step 8: Enjoy!!

Share with family and friends. You can either serve warm with frosting or refrigerate for future use!
