Introduction: NB's Bangin' Breakfast Bagels

This is the tastiest breakfast bagel you'll ever have the pleasure of sinking your gnashers into! A delicious bacon omelette sandwhiched in an indulgent dough-y ring! Its easy, quick, and something myself and my girlfriend love to indulge in on a lazy weekend morning. By now your mouth must be watering so without further a-do, lets get into it!

Supplies

Here's what you're going to need! The ingredients below are enough to make 2
bagels:

- Oil/Butter. We use coconut oil for ours, but feel free to use whatever type of oil you prefer or have to hand.

- 4 Rasher of Bacon. Its completely up to you which kind (smoked/unsmoked) for ours, we go with unsmoked.

- 3 Chicken Eggs

- Milk. Again, it's up to you which type (Skimmed/Semi-Skimmed/Full Fat). for ours, we went with semi-skimmed.

- 2 Bagels. You can use whatever type of bagel you prefer, for ours we just use plain bagels

- Salt and Black Pepper

- Grated Cheese (Optional). If you want to use it, you can choose whatever you like! Feel free to experiment!

- Ketchup (Optional)

Step 1: Frying the Bacon

Now youve gathered up the ingredients, its time for the first step: Frying up some delicious bacon.

In a frying pan, bring the temperature up to a medium heat. Once the pans nice and hot, throw in your oil or butter. Wait for it to melt and then give your pan a shimmy to cover the pan in it.

Once you've done this, its time to add the bacon. You want to fry the bacon until its nice and crispy for this. I know the crispiness of a piece of bacon is down to personal preference, but dont worry if crispy bacon isnt your thing; trust me, you're still going to love it!

While your bacon is frying, get out a plate or clean surface (like a chopping board) and place a piece of paper towel over it, one will do!

Once the bacon is cooked, place it on the paper towel. The paper towel will absorb any excess fat or grease from the bacon.

Once youve done this, roughly chop up the bacon.

Step 2: Omelette Time!: Mixing the Eggs

Crack all 3 eggs into a bowl or jug and chuck the shells in the bin. As you can see from the images, I've used a measuring jug for this, but you can use whatever you've got to hand.

Then, add just a dash of the milk to the eggs, around 15ml will do. You dont want to add too much milk as you'll lose any structural integrity in the omelette otherwise.

Next, add a pinch of salt and a pinch of black pepper and mix it all together with a fork. The result should look like the image above!

Step 3: Omelette Time!: Cooking the Omelette

For this step, were going to be cooking our omelette in the bacon fat that
got left behind form frying our bacon. If this doesnt sound good to you, no worries, just wipe the pan clean and melt another knob of butter/oil.

We then need to turn the heat down just a touch, we dont wan't to burn our eggs!

Then, add in the egg mixture we made in the last step. Once its all in the pan, grab the pieces of bacon we cut up and sprinkle them into the pan with the eggs. Try to make sure the bacon is spread out evenly. If your adding cheese to yours, throw all that in at this point too!

Cook the omelette until its done (or until the bottom of it looks like the picture above if you're not sure). If the bottom is cooked but the top hasnt completely solidified, then heat up your oven grill, and place your pan under it for a couple of minutes, this will cook the top of the omelette so the whole thing is cooked evenly throughout!

Then flip the omelette over like in the image above and cut it into two. Turn off the heat and move the pan onto a cooler surface but leave the omelette halves in there so that they're kept warm throughout the next step.

Step 4: Prepare the Bagel and Assemble

Using a bread knife (or whatever you can use to hand) cut the bagels in half
like in the image above.

Then add whatever you want to them. I personally butter my bagels, then squeeze a ring of ketchup on. But theres no reason you couldn't throw on some more cheese, or even some cooked rashers of bacon!

Then take your omelette out of the frying pan and place onto one of the bagel halves. Add the second half on top and voila! The best breakfast bagel you'll ever have!
