Introduction: Nando's Copycat Meal

Nando's is my favourite restaurant. I just can't get enough of it. I love their food because it is full of flavour and interesting. Unfortunately, I live quite far away from any Nando's restaurant ,so I don't get to eat at Nando's unless I am on holiday somewhere where there is a Nando's restaurant nearby. My favourite Nando's meal is hot spicy chicken and rice with corn on the cob. I always get it when I go to Nando's and I never get bored of it. I experimented with some ingredients and I found the perfect recipe. It is a good solution to my problem because now I can make my own Nando's meal!

Step 1: The Ingredients for the Nando's Rice

For the rice you will need:

250g cooked long grain rice

1 medium finely diced onion

1 medium diced red pepper

100g small frozen peas

1 chicken stock cube

2 teaspoons of ground turmeric

50ml boiling water

Step 2: How to Make Nando's Rice

Put the chicken stock cube in a small bowl and add the boiling water.

Whilst the stock cube is dissolving, fry the rest of the ingredients in a pan on a medium heat for 10 minutes or until all of the ingredients are cooked. Make sure the stock cube is completely dissolved before adding it to the rice. remove the rice from the pan after you have finished and put a portion on to a plate or a separate dish.

Step 3: How to Make the Nando's Chicken

Butterfly cut a chicken breast, so you get two pieces. cook the pieces of chicken for about 4 minutes on each side on a medium heat with some spicy marinade. (I use a medium heat chilli Nando's marinade to get the perfect flavour for my Nando's chicken, but you can always use a marinade that suits your taste.). If you are not sure if it is cooked cut a piece of chicken through the middle. A cooked piece of chicken should not be raw inside or have a pink colour. Once cooked, remove the chicken from the pan and put it on to the plate.

Step 4: The Corn on the Cob

Cut the end of a corn and the cob off and cut the remaining piece into two smaller pieces. Fry the corn on the cob in a pan with boiling water and a teaspoon of turmeric on a low heat for about 5 minutes or until cooked. Once the corn on the cob is cooked put it on the plate with the rest of the food. Enjoy your homemade Nando's meal!
