Introduction: Oats Upma

Upma is a dish originating from the Indian subcontinent, most common in Andhra Pradesh, Tamil Nadu, Telangana, Karnataka, Maharashtrian and Sri Lankan Tamil breakfast, cooked as a thick porridge from dry-roasted semolina or coarse rice flour. Various seasonings and/ vegetables are often added during the cooking, depending on individual preferences. Today it is popular in most parts of India and is prepared in various ways. Upma is also known as Uppumavu or Uppittu.

I Have made Upma with rolled Oats, semolina and some veggies.

Supplies

  • Oats (½ cup)
  • Semolina (¼ cup)
  • Cashews - Roughly chopped (5-8 nos)
  • Coriander Leaves
  • Curry Leaves (8-10 Leaves)
  • Water
  • Oil (1 Tbsp)
  • Veggies
  • Carrot - Roughly Diced (handful)
  • Green Peas (Handful)
  • Onion - Roughly chopped (1 small)
  • Spices and Condiments
  • Mustard seeds (½ Tsp)
  • Cumin Seeds (½ Tsp)
  • Hing/ Asafoetida (⅛ - ¼ Tsp)
  • Turmeric Powder (A pinch)
  • Green Chillies - Cut into slits (2 nos)
  • Black Pepper Powder (A pinch)
  • Salt ( As per taste)
Instead of Cashews, Roasted peanuts can also be used.
Use Green Chilly as per spice tolerance.
Also try adding other veggies

Step 1: Roast Oats

Dry roast the oats in a pan for about a minute or two till the oats are little toasty. Don't let them roast too much or else they will burn. Keep this aside

Step 2: Boil the Veggies

Boil Carrot, Peas and any other veggies you chose, except onions in a 2 cups of water and keep it aside covered with a lid.

Step 3: Spice Mix

lets get started in making the oats upma, I have used non-stick pan for this recipe.

  1. Heat oil on low flame.
  2. Add mustard seeds and cumin seeds.
  3. Wait for mustard to start pop/crackle.
  4. When it crackles add cashews and start stirring.
  5. Add green chillies.
  6. When cashews are little toasty or brown add asafoetida powder give it a mix.
  7. Add curry leaves and mix.
  8. Add onions and mix.
  9. Stir for few seconds then add turmeric powder and a black pepper powder.

The spice mix is ready, lets move ahead.

Step 4: Main Ingredient

Now lets add our key ingredients to the spice mix.

  1. Add semolina to the pan, keep the flame on medium level and stir for few seconds.
  2. Add the roasted oats and mix, let it cook for a bit.
  3. Once the semolina starts to swell up you know the mixture is done roasting.

Step 5: Water and Veggies

  • Add the boiled veggies along with water.

lookout for water, don't pour too much water, it'll turn the upma into a porridge.

  • Add salt.
  • Stir the mixture, add hot water if required.
  • Once the mixture starts to boil turn the flame to low and cover the pan with a lid and let it cook for two minutes.
  • If the mixture has turned thick, it is done, if not then cook it for another few minutes.

Step 6: Final Step

Upma is ready, garnish it with coriander leaves and cashews and serve hot and enjoy this healthy breakfast.
