Introduction: One Pot Cheesy Mushroom Chicken Fill

Calling out ALL Mushroom and Cheese lovers…This is easy 5 step recipe to make a delicious cheesy one pot meal.

Chicken breasts are such a supper staple that it’s often hard to think of them as anything special, but let me tell you this: Splitting chicken breasts and filling them with your favorite flavours makes them anything but ordinary. Mushroom, two kinds of cheese, and garlic come together here to stuff golden chicken breasts with a flavourful, cheesy filling.

Supplies

- 1 chicken breast

- 2 oz shredded mozzarella

- 2 large button mushrooms

- 2 cloves of garlic

- flour

- 1 egg (beaten)

- bread crumbs

- 4 oz tomato sauce

- oil/butter for frying

- 1/4 tsp rosemary, salt, pepper, paprika, oregano mix

- grated parmesan (optional)

Step 1: Filling the Chicken

Place a chicken breast on top of your work area, sprinkle the rosemary ,oregano, paprika, salt and pepper mix, and cut the meat half-way through on one side so that you will be able to stuff it. Fill with mozzarella and mushroom, and then firmly squeeze the meat together.

- ( tip: secure the meat with toothpicks, so the filling doesn't spill )

Step 2: Covering the Chicken

Dredge the stuffed chicken breasts in the flour, egg wash, and finally in the bread crumbs. Make sure the chicken breast is entirely coated in bread crumbs and the final coating doesn't flake off.

Step 3: Frying the Chicken

Fry the chicken breasts in hot oil until golden brown on both sides.

Step 4: Marinara Sauce

Fry the garlic with oil/butter till they are golden brown and add the crushed tomatos. Add spices like oregano, italian herbs, rosemary, salt and pepper. Fry till the sauce starts to sizzle with oil/butter.

Step 5: Getting It Ready for Baking

Fill a casserole dish with about 3oz marinara sauce and place the fried chicken breasts on top. Spread the rest of the tomato sauce on the meat. Then sprinkle parmesan cheese on the breaded chicken breasts, put the casserole dish in the oven, and bake at 360°F for 20 minutes.

Step 6:

Carefully take it out of the oven. Sprinkle extra cheese to add more flavour ;)
