Introduction: Paleo Banana Icecream Truffle

These bite-sized truffles make a delicious frozen treat, perfect for serving at a Paleo party. They are incredibly simple. This took maybe 10 minutes and there's no cooking.

A blender and banana is the main hero of this recipe. To enhance the flavor we can add nuts, syrup as we like.I was amazed by the magic of banana which gave the ice cream a creamy texture. Frozen banana, when blended in a blender, becomes the most incredible, sweet, soft-scoop textured 'icecream'.I have used a Morphy Richard Hand Blender. People who are one diet and craving for some dessert this is a perfect recipe with no added sugar. :)

Step 1: Ingredients

Ingredients:

5-6 cashews (or other nuts)

2 Banana

1 cup shredded coconut

Extra coconut for rolling

1 Tsp Honey

5-6 Raisins

Step 2: Prepare

Peel your bananas.Cut them into small pieces of about half an inch.

Step 3: Freeze

Freeze for just 1-2 hours in an air tight cover or a container.

Step 4: Blend

Add Honey. Blend, blend, blend - scraping down the blender when they stick.Do not over process. Blend till a creamy texture.

Step 5: Add Nuts

Add raisins and chopped cashew. Give a good mix.

Step 6: Freeze 2

Refrigerate it until it is firm enough to scoop and roll, about 1 hour.

Do not wait too long because if the mixture becomes too cold it will be difficult to work with. Start checking after one hour.

Step 7: Scoop

Use a spoon or candy scoop and take a scoop. Shape it with your hands into a ball.

It might start melting slightly.

Put it back into the freezer immediately.

Step 8: Coconut

Grate the coconut.

Now take out the truffles from the freezer and coat it with coconut gratings.

You could also roll them in finely ground coconut.
